Pumpkin Ginger Cupcakes

They turned out ok but burnt on most of the bottoms even though I baked at 350 and I had to add 5 minutes in order to cook them all the way through. The taste is fine but they are fairly mushy not like real pumpkin bread. Next time I'll reduce the heat to 325 bake for 30 minutes and minus the pudding mix. Instead adding another 1/2 cup flour and an additional egg to make up for the moister.

Strawberry Cake II

Excellent cake. I reduced the cooking time to 25 minutes or it's to dry and then made butter cream frosting for the side which holds up better then the cream cheese frosting. Inside I mixed the Whipped cream with the cream cheese and powder sugar and vanilla, it makes a light and fluffy cheesecake filling-don't over whip it or it will go flat.

Yummy Sweet Potato Casserole

Made this for thanksgiving and everyone loved it. I was a little hesitant when I was looking at the picture and saw how orange the casserole looked. I thought they may have used yams instead but the sweet potatoes were perfect. I made a little extra toping for the 9x13 pan and I baked the potatoes instead of boiling them per others reviews suggestions and it made it delicious. Will definitely be making for christmas.

Crustless Cranberry Pie

LOVE IT! DID a few alterations though I doubled the batch and put it in a 9x13 pan cut the butter down to 3/4 cup and the sugar down to 1&1/2 cups. I then used the remaining 1/4 cup butter 1/2 cup brown sugar and a 2 heaping spoonfuls of flour to make a crumb topping. EVERYONE LOVED IT. went in minutes.

Italian Biscotti

Absolutely love this recipe so easy! I also melt chocolate almond bark and dip the flat side of them in the chocolate. HUGE HIT - and if i want to get fancy i melt white chocolate or white choc. almond bark and fill a squeeze bottle to make fancy white drizzles over the dark chocolate. I take them to baby/bridal showers all the time.

Simple Scones

I love making these scones because they are so easy and you can make so many variations of them. I like to put some Orange zest (i whole orange zested) and fresh cranberry's (about 1 cup dried or 1 1/2 fresh-fresh makes them moist)in mine then make a simple icing with a little orange extract in it to top them. (about 1 cup p.sugar and 1/4cup nonfat canned milk 1/2 tsp orange extract and mix till smooth.) SUPER yummy! I've also added a 12oz can of pumpkin to them and made a thicker icing to top those (powder sugar, canned nonfat milk and a little cream cheese about 3 oz and just keep adding sugar and milk until you get the consistancy you want)
