Almost Tuscan Sausage and Kale Soup

Thank you so much!! It taste just like that you would get from that Olive place. Mmmmm!! Only thing I did different was I used beef stock instead of chicken & that's only because I accidentally bought beef. I used the little concentrated tubs of beef stock that Knor sells. I added 2 of the little tubs and 6 1/2 cups of water (1 tub + 3 1/2 cups of water is what the directions say). I also added a lot more Kale cuz I had it, we like it & it's suppose to be a supper-food. I will for sure be making this over & over again. For sure a save!! I will use beef stock again cuz I love the way it tastes. I'm a busy mom & my kids sports & other activities keep me running around & getting home with little or no time to get a tastey, healthy & hot dinner on the table. I plan on making this before we start running around & then putting it on the Ceock Pot on low so it will be ready for us when we get home. Thanks again!!

Grandma's Gingerbread Pancakes

Love these!!! Thanks to your wonderful Grammie!! I made these this morning for my 2 little girls and myself and we just loved them. I am going to put the leftovers in the toaster oven tomorrow for breakfast for them before school!! Thanks again!!!

Marshmallow Popcorn Balls

So this is how I made them. I used 3 bags or microwave popcorn & 1 16 OZ bag of Mini Marshmallows. I put the marshmallows into a microwave safe bowl along with 2 TBS of water. Microwave for 30 seconds and stir, repeat 5 times (for a total of 2 1/2 minutes). I added food coloring to my melted marshmallows, mixed it in and then dumped it onto my popcorn (that I had in a VERY large bowl. I put on some disposable gloves and then greased my hands up with Crisco. I folded the popcorn and marshmallow togehter, formed it into balls (I got 20) and I stuck popsicle sticks in them (kids love anything on a stick). I let them cool on wax paper then wrapped them up in some plastic wrap. Came out great! Kids loved them!! Thanks for the idea!

Pumpkin Pecan White Chocolate Cookies

I LOVED these!!! I used light-brown sugar instead of the called for dark, Crisco (butter flavored) and I turned the temp. up to 350 like someone else suggested. I found a 9 minute bake time for smaller cookies and 13 minutes for a bit larger ones the best. I let them cool on the pan for about 5 minutes then transfered to a wire rack where they didn't stay very long as my hubby and kids quickly gobbled them up!! Thanks for the great recipe!! The only thing I'll do different is double or tripple the recipe next time!!

Pumpkin Seeds with Cinnamon and Salt

I have never had pumpkin seeds before so I figured I'd give it a whirl this year. So the kids and I made these. I personally thought they were just okay and probably won't eat them (I just think I'm not a pumpkin seed fan is all) but my kids LOVED them!!! I gave this recipe 4 stars!! Thanks!!

Homemade Pancake Mix

Chicken Pot Pie with Cheddar Crust

I had leftover turkey and veggies and needed a nice crust recipe. I found this and thought it looked pretty good. It was pretty easy to make the crust and we all enjoyed it! I didn't have any butter in the house so I used some I can't believe it's not butter in the plastic tub and it still seemed to turn out fine. Thanks!

Creamy Rice Pudding

I had never had rice pudding before. I made rice for lunch today and had a lot leftover and thought I'd look up a recipe and give it a whirl. I sure am happy I did. It was awesome!!! My husband and kids loved it too! They all gave it 5 stars. I will for sure make this again. Thanks!!!

Banana Muffins II

This was THE BEST!!!!!!!!!! I did make a few changes. Instead of the butter I used 1/3 Cup of Pure Pumpkin Puree. I also used 1 Cup whole wheat flour and 1/2 Cup White flout (just to add some more nutrion to it). I added 1/2 Cup of walnuts. Mmmmmmmmm!! It is now going to replace my old recipe. My husband also rated them a 10!!! Thanks!!

Pecan Chicken A La King

I am working on a tight budget to feed my family (as is everyone I'm sure) and I had some left over chicken to use up. So I tried this one out and the whole family loved it! My husband rated it an 8 (on a 1-10 scale). I give it a 9. I will definetly be making this agian. I'm gonna make a turkey for Christmas dinner and make this with the leftovers. Thanks!! Loved the pecans in it!!

Garlic Red Potatoes

Awesome!!!!!! What more can I say!! I loved them! My whole family loved them!! Instead of butter I used 1/4 cup of I Can't Believe It's Not Butter Spray, which has no calories or fat (I'm sure if you ate the whole 1/4 by yourself then it would)instead of the butter but did the rest the same. I did cook them in the microwave first for 20 minutes then I finished them off in the oven with the meat. They came out great. I'm gonna make these for Thanksgiving! Thanks again!!

Lighter Banana Muffins

I LOVED IT!!! I used 4 very ripe bananas (just because that's what I had)and then followed the directions (I did use whole wheat flour instead of the all purpose). I put in 1/2 cup of walnuts and my daughter was snacking on some Ocean Spray Crasins so we threw in 1/2 Cup of them too! They came out EXCELLENT!! They weren't dry or chewy. Very good! I am always looking for healthy, portable breakfast ideas for my 5 year old. She gets on the school bus at 7am and eats breakfast on the bus, so these are great!! I put about 1/4 cup into each baking cup and I got 12 good-sized muffins. Thanks!!

Leftover Chicken a la King

Very good! A great way to use up my leftover chicken! I added the curry, chili powder, paparika and ground cumin that someone else mentioned and it was really great!! I did add 1 TBS of cornstarch instead of 2 TSP (it's only 1 TSP more) it seemed to help thicken it up better. I served it over rice but I think it would be great over potatoes too!! Thanks!!

Best Chocolate Chip Cookies

This recipe was GREAT!!!! I was really craving some cookie dough so I looked to my favorite site and found this. The dough was AWESOME!!!!! I didn't have any chocolate or nuts but I did add a tear and share sized bag of M&M's to it. They were fabulous baked too. Thanks!!!!!!!

Best Spinach Dip Ever

This really is THE BEST SPINACH DIP EVER!!! I made it the night before my party and they ate it all. It was so easy and good. I too used the whole package of spinach. I found the Knor Dry Leek Soup mix in the ethnic foods asile. I actually found it on accident which worked out great 'cause when I went to look for it where I thought it would be (in the soup aisle) it wasn't there. Again great!!! Thanks!!!

Jumbo Breakfast Cookies

These cookied were great!! I have been trying to find something healthy for my soon to be 5 year old to take for breakfast with her on the bus (she gets on at 7am this fall). The kids and husband loved them! I too used puffed rice cereal as I had no oat rings in the house. I also used 1 Cup of applesauce in place of the 1 Cup of butter and I used 1/2 Cup white sugar and 1/2 Cup of Splenda instead of the full 1 Cup called for. They turned out great! I only got 15 cookies though so I guess next time I'll try to make them a bit smaller. Over all very nice cookie and a great breakfast for hungry kids.

Easy Fudge Brownies

These were great! I thought that they were simple and quick to make. Instead of using a double boiler I just melted the shortening in the microwave. I also used only half the amount called for and replaced the other half with some pumpkin puree. They cooked for 18 minutes and came out beautiful. 2 thumbs up from my family. I will for sure make them again!!!

Chocolate Bundt Cake

This cake was delicious and pretty easy to make. I do agree it makes way more than just one cake. I filled my pan about ¾ of the way full and then I used the rest to make 12 cupcakes and we also ate a good bit of frosting!! It was chocolate but not too chocolaty. It has a really great taste!! Thanks!!

French Toast Fingers

These were great!!! I love feeding my children something different every morning and they gobbled these right up! I used sugar free jam too!! I will surely make these again. I think I put a bit too much jam on them though 'cause they were kinda hard to keep together. Next time less jam. Thanks!!!
