Sweet Potato Casserole II

After years of trying to make good sweet potato casseroles, I made this one for Thanksgiving. Even members of our family who don't care for sweet potatoes tried it and liked it. We have several diabetics in the family, so I substituted the sugar/brown sugar with the Splenda variety and the dish was still absolutely wonderful. (Splenda brown sugar is really good even for non-diabetics). Thanks for a great recipe!

Country Sausage Gravy

This is the best sausage and gravy recipe I have ever eaten! Thanks to the person who submitted it. I made it for a tailgate breakfast prior to an early football game! I increased the ingredients to make enough for about 30 people, but it served more than that. I made one mild version and one with the hot pepper flakes. The spicy gravy was the biggest hit. Then, I made it for company with teens who are picky eaters, and they ate it up. The recipe is so good, I would suggest that you do not omit the onion, bell pepper, garlic, sage, thyme, parsley, peppers or boullion because that's what gives it the unique flavor. (I mince the onions, bell pepper and garlic into small bits in the food processer). Tonight, I made it for our monthly breakfast supper, with eggs on the side. My husband wants me to try it again, using only 1/2 pound of the sausage and cut back on the hot pepper flakes. (He likes alot of gravy). Two biscuits, covered with the gravy, make a hefty serving. So, unless you have really big eaters in your family, the original 1 lb sausage recipe can serve 6 easily. One last comment: I didn't make biscuits from scratch. Pillsbury Frozen Oven Baked Buttermilk Biscuits are the best. No need to thaw. Put them in a preheated oven, bake as directed, and they come out looking like homemade.

Mexican Sugar Cookies

I took these cookies to a football tailgate party and they were a hit. The college kids were grabbing 2 and 3 at a time. I was sorry I couldn't find anise seed but used 1 tsp of anise extract. Yummy!

Chile Relleno Casserole

At the last football game tailgate party, the theme was mexican food. I knew I couldn't take chile rellenos because they'd get too greasy. My husband grows anaheim peppers, so I picked them fresh, blistered and peeled them and made this recipe. I made four times the recipe, kept it hot in a chafing dish and it was a huge hit. Nothing was left after about 2 hours because the college frat boys kept going back for seconds!

Spicy Chile Casserole

Absolutely the best tasting casserole dish. Our football tailgate's theme was "mexican". I made this dish (together with a a chile relleno casserole) and it was gone pretty quick. We have lots of college kids who come by because we really serve some good food! Everyone loved the taste of this casserole. The only thing I did differently was to mix the chopped chicken with the sauce. I thought I'd get a better distribution of all the ingredients that way. I have to take this recipe to our next tailgate party because everybody wanted it!

Daddy's 'If They'da had This at the Alamo we would'ha WON!' Texas Chili

I've made this recipe twice. Once using the chopped beef, and once using the coarse ground beef. We liked the ground beef better. This is the best tasting chili I have ever made. We took it to a football tailgate party and not a speck of the chili was left. It is really, really good!

Quick and Super Easy Chicken and Dumplings

I made the recipe and it was such a great comfort food during our cold winter weather. I had cooked a whole chicken in the crock pot, intending to make a different recipe, but glad I made this one. Super easy, super good!
