Vegan Agave Cornbread Muffins

Really, really good. I made 3 minor substitutions, but kept the ratios the same: apple butter for the apple sauce, regular whole wheat flour for the pastry flour, and maple syrup for the agave. These muffins ARE sweet, but not at all too sweet. The only thing I would want to change in a future version would be to increase the ratio of cornmeal to flour; I'd have liked these to have a stronger cornmeal taste. Future spinoffs could also include orange zest & cloves for a more spice-cake profile.

Curry Grilled Chicken

This tasted good, but barely like curry. It's more like a tangy barbecued chicken. So, a bit misleading to call it Curry Grilled Chicken. I'll probably try to make up my own recipe, rather than try this one again.

Banana Cupcakes

Absolutely delicious! I always keep brown bananas in the freezer in case I get inspired to make banana bread, but this recipe might inspire me to make banana cupcakes more often instead! I frosted these with the "Rich Chocolate Frosting" recipe from this site and they were a huge hit.

Cream Cheese Frosting II

I don't know if it was because I used nefuchatel instead of full-fat cream cheese, but this frosting turned out runny and not at all rich tasting. It also wasn't terribly sweet. I used this on some red velvet cupcakes and only 3 got eaten.

Rich Chocolate Frosting

I halved this recipe and added 1 tbsp of cayenne pepper and 1 tsp powdered ginger to make it a little bit spicy, and everyone loved it! Frosting turns out very fluffy and extremely chocolaty -- thanks for the great recipe!

Roquefort Pear Salad

I first tried this recipe when my mom tore it out of a newspaper ad, and it has always been a favorite. I've found that using 2 avocados doubles the fun; you can't have too much of their creamy texture. I also use d'anjou pears, chopped and not peeled, which makes the salad look very pretty and green. I prefer spinach to lettuce, and have found that the chewier texture of spinach complements this salad well.

Beef Curry Soup

This was really good and fun to make for two novice chefs. We used chuck steak rather than stew-grade beef, and sweet potatoes rather than regular potatoes. The sweet potatoes went really well with the curry, and I didn't find the meat to be too tough. We'll definitely make this again!

Spicy Sweet Potatoes

These were good, and very easy to prepare. I followed the directions exactly, although when I reheated a bowl for myself later on I added some more chili powder and liked that flavor a little more. The spice in these is subtle, and you're still going to get mostly a sweet potato taste, so if you're looking for something a little more palate-shocking, this probably isn't it.

Cathy's Banana Bread

Oh MAN!! I just took this out of the oven and it is AMAZING. I was worried it wouldn't be sweet enough, so I used 1 & 3/4 cups of brown sugar rather than the 1 & 1/3 cups of white sugar. I'm also used to baking bread in a bread machine, so I don't actually have loaf pans. I used the loaf pan from my bread machine, which is narrow and tall, and ended up having to bake for about 90 mins. But this bread is moist, bananalicious, and awesome. Thanks!!!
