Chocolate Bourbon Pecan Pie
Great pie, loved it! I made it as written--thought the bourbon and chocolate were perfect (how can you go wrong with bourbon and chocolate?)--it's a bourbon chocolate pecan pie, so I wanted those flavors to infuse the pie. I doubled the recipe, found this filled 3 deep dish pie pans nicely. Maybe could have squeezed all the filling into 2 very full pans, but didn't want to risk having to clean my oven afterwards!

Salmon with Lemon and Dill
A family favorite, my husband raves when I serve this. Super easy, too. I prefer to make it with fresh dill, fresh lemon juice, and fresh garlic, but have enjoyed it as the recipe is written, too.

Ginger Glazed Mahi Mahi
My kids (ages 4,6,and 7) actually request this fish dish. It's easy enough to make, using frozen (thawed) mahi mahi from Costco. I like it best with fresh ginger, rather than ground ginger, but the ground ginger works in a pinch. Be sure to boil the leftover marinade as sauce to put on the fish or on rice; that's the best part.
