Butter Rich Spritz Butter Cookies

Creamed Peas and Onions

I made as directed, but I used a can of peas without onions. I chopped up some fresh onion and sauted them in a little bacon fat then added them to the creamed pea mixture along with a little dill and kosher salt. Mmmmmm! The left overs were great on toast!

Corned Beef Dip

I am a huge cb fan and this was awesome. I used a can or hormel corned beef hash, half the sour cream and about 1/2 c of mayo. Mixed it, let it sit for an hour and spread it about an inch thick in a glass baking dish and baked until t was bubbly. I sprinkled some cheese on top after pulling it out of the oven. Mighty tasty! The only thing I would change next time is the amount of the onion soup mix. It was over powering and made the dip very salty, even right out of the fridge before putting in the oven. Otherwise, yuuummmyyyy!

Sweet Bacon Wrapped Pork Loin

I sliced my tenderloin into 1inch rounds, wrapped it with turkey bacon (instead of pork) and used toothpicks to attach it. I only made 3 of these, approx .5 lb of pork loin since its just my husband and I. I doubled the sauce recipe except for the onion and added 3tbs total of brown sugar. I also decided to use it as a meranade instead of just baking the meat in the sauce. I made sure both sides of the meat was covered in the spices and onions while marinading in the fridge for about 6 hours. While the meat was baking I also basted the sauce over it every twenty min or so after flipping it each time. After being baked in the oven for about an hour on 350, it was SO tender and sweet tasting. The turkey bacon absorbed the sweetness of the sauce/meranade, I wasn't expecting that!
