Eggplant Parmesan II

This is such a tasty recipe. The first time I made it, I didn't allow myself enough time to bread and bake the eggplant. I only finished half of the slices and had to leave the other half for my husband to finish when he got home from work. He apparently didn't read the recipe, and decided to fry the remaining slices (as well as the ones I'd already baked). Even so, it turned out so well, and we ended up polishing it off in no time. I'm planning on making this again this week with all baked eggplant. Looking forward to it, it really was so good, and I don't think it was just because the eggplant was fried.

Slow Cooker Latin Chicken

I made this the first time for guests and it was really good even despite cooking it on HIGH for 6 hours instead of the specified 4 on LOW. The second time I cooked on LOW for 4 hours and the potatoes were not quite done. This time I made it on the stovetop, and simmered, covered for an hour or so. The chicken would likely have been a bit more tender in the crockpot, but other than that the taste was just as good. I like beans, so I add one more can, and I leave out the allspice (because I don't have it on hand). I serve it with rice as pictured. My husband likes saucy dishes, so I double the broth. The combined texture of creamy beans and sweet potatoes is so yummy! Definitely one of my very favorite dishes. Thanks for sharing!

Chocolate Cobbler

I'd never tried anything like this. My husband, on first taste said, "That's a unique thing," and then went for seconds. I say it's the perfect blend of crust and gooey. Although it does taste a little like chocolate flour and water mixed together. I wonder how it would turn out with milk instead of the boiling water. Bottom line, easy to prepare, and good texture. Something I will likely make again.

Slow Cooker Chicken Stroganoff

I made this for an easy Sunday dinner. The chicken went straight from the freezer to the slow cooker, and actually the cream cheese was frozen too (I threw everything in at once). Set the crock pot to high for about 4 hours. I added a few twists of fresh ground pepper and about a 1/4 cup of sherry to the pot about 30 minutes before serving. Judging from the faint sucking sounds from my three children and requests for seconds, and then thirds, I would say it was a resounding success. Five stars for easy prep, and yummy results.

Asian Lettuce Wraps

This is a very yummy recipe. I liked the water chestnut crunch in the mixture. I ended up adding more hoisin sauce than called for because we like the flavor. I also used fresh ginger.

Vanilla Crepes

These had a wonderful vanilla flavor. They were far too buttery, I will decrease the butter by half next time. Otherwise excellent. We served them with Nutella.

Cinnamon Ice Cream

This was incredible. I don't think it could possibly be any creamier. I quadrupled the recipe for my 4 quart ice cream maker. Decadent, rich (don't tell anyone it's just cream and eggs!) and simply amazing. I did reduce the sugar to 3/4 for one recipe. Thanks Elizabeth!

Tortellini Soup II

This is a great recipe. I love that it is a one-pot meal that comes together quickly and easily without a lot of chopping, or preparation. This makes clean-up a snap. Whole family loved it, including my children ages 3 and 4. It's a thick soup, which we prefer. Thanks for the post!

Peanut Butter Balls III

Great recipe to make with the kids. We made a double batch this morning for holiday gifts. The texture when rolling up the balls was perfect. I've tried other recipes when it just sticks like crazy to your hands, but this one was very manageable.

Garlic-Buttered Green Beans

Very good recipe. Used frozen green beans, elephant garlic and olive oil. Turned out very well. If using frozen green beans they really only need to be blanched in the boiling water before adding to garlic and onions.

Sauteed Garlic Asparagus

Got rave reviews at the Thanksgiving dinner I took these to. I used olive oil, and added balsamic vinegar at the end. The second time I added the vinegar plus some parmesan cheese and it was even better. Yum!

Authentic Mexican Tortillas

Let me say, we really like these tortillas, if I could I would have given the recipe 3.5 or 3.75 stars. But the lower rating is because the tortillas are too stiff to actually use in burritos, tacos etc. I've tried it three times, with variations on the shortening/water content with the same result. But the taste is great. I use them in casseroles, and the process of making them really is enjoyable.

Best Big, Fat, Chewy Chocolate Chip Cookie

All I can say is WOW! I have never had chocolate chip cookies of any size turn out so beautifully shaped. I was very skeptical of the 1/4 scoop size, but when I took them out of the oven I was sold. Not only did they look great, they simply tasted fantastic. Chewy, gooey, moist, chocolatey... everything you want in a choc. chip cookie. This recipe is a keeper. Even DH was impressed, and he's usually quite the critic.

Ten Minute Enchilada Sauce

Very good recipe. I have no idea what an authentic taste would be, but this sauce has a very rich taste to it that we love. I've never used onion salt, just normal salt since that's what I have on hand. And it's fast! Perfect for our family.

Colorful Spinach and Prosciutto Side

This turned out to be a heavier side than I was expecting. The prosciutto plus oil, plus marinated artichoke hearts and roasted red peppers made for a very heavy fat/oil taste. Otherwise, the flavor was very good. If I make this again I'll cut back on oil. Another possibility would be to use frozen artichoke hearts (not marinated in oil) and roast your own red peppers. It does make for a very colorful salad, it looked very nice.

Wild Rice Harvest Casserole

As per other reviewers suggestions, I used low sodium broth. Used dehydrated celery, onions, canned chicken. I forgot to cover the dish for the first hour, but it still turned out fine. Was a hit with the whole family.
