Quick and Easy Chicken Noodle Soup

Reviewed: Nov. 7, 2007
Really simple and really good. The only change I made was to add some garlic when I sauteed the the onions and celery because I add garlic to everything. This recipe is a definite keeper. Thanks for the recipe.

Sweet Mustard Chicken Bake

Reviewed: Nov. 6, 2007
With all these glowing reviews, I'm sad to say this wasn't a home run for us. I went back to be sure I didn't mess up the recipe, and I definitely did not. Hmmmmmmm. If you decide to make this, I will say there's way too much sauce and it's very thin and runny. If I were to try it again, I'd cut the butter in half because I think it would make the sauce thicker (and reduce the calories and fat) and I might add garlic and a little more of the mustard. It needs a little something more for me. Sorry!

Paul's Pumpkin Bars

Reviewed: Nov. 5, 2007
Yum!!! As others suggested, I added about 1/8 teaspoon nutmeg and 1/8 teaspoon pumpkin pie spice. Unfortunately I didn't have any cloves or I would have added some. Cake like texture and the icing is really good. I doubled the icing recipe as others suggested. I used 8 oz of cream cheese, 1/2 cup butter, 1 teaspoon vanilla and 4 cups of powdered sugar. These were really good. This recipe is definitely a keeper.

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

Reviewed: Nov. 5, 2007
Really, really good and really, really easy. I made the meatballs from scratch. I used about 1.5 pounds of ground beef, 3/4 of a diced onion, 2 eggs, 1/2 cup bread crumbs, @ 3 teaspoons of diced garlic, 1 teaspoon italian seasoning, salt, pepper, a little onion powder and a little seasoning salt. I baked them for 25 mins on a broiler pan so the fat would drip off. Once I added the meatballs to the sauce (I originally made a half batch of sauce since I only made 1.5 lbs of meat) I decided I wanted more sauce so added another can of cream of celery and then added 2 beef bullion cubes and about half a packet of dry onion soup mix since I didn't have any more canned onion soup. I also added one soup can full of water. I cooked the whole pot on high for about 3.5 hours on high and it was really delicious. The only thing we felt it needed was more salt. We'll most definitely have this again.

Apricot Glazed Chicken

Reviewed: Nov. 3, 2007
Pretty good and very easy. There was something missing though, and I'm not sure what. I added extra apricot jam to see if that was it, and while it definitely added to the flavor, it still wasn't "the" thing it needs. I did add some garlic and onion powder when I sauteed the chicken and then added salt when we served. It was good, but not over the top. I'll probably make it again on a day when I need to whip up something that is good and pretty healthy. The recipe itself has very little fat and calories which is great for a main dish. Served with plain white rice and soy sauce on the side.

The Best Sweet and Sour Meatballs

Reviewed: Nov. 2, 2007
I really wanted to love this since everyone seemed to rave about it, but I found them sort of bland. I did add garlic as suggested and used corn starch instead of flour, but they didn't have enough flavor for my taste. I may try them again, but will reduce the water and add extra soy sauce and vinegar to see if I can add to the flavor. It's hard to explain, but they just weren't tangy enough. Hmmmmmmm. Wish they blew me away like they did the others.

Surprise Banana Cake

Reviewed: Nov. 1, 2007
Really good and really moist. Easy to make. It's a cross between banana bread and banane cake. We topped it with the banana butter icing from this site.

Banana Butter Icing

Reviewed: Oct. 29, 2007
This is really good. I put it on the surprise banana cake from this site. You do have to use quite a bit more powdered sugar to make it stiff enough to "frost" a cake so it doesn't end up running to the edges. There was PLENTY of frosting for a 9 X 13 cake. My 9 year old daughter loved it and asked me to make her a batch just to eat like pudding (of course I didn't). Thanks for the recipe.

Ham 'n' Swiss Rolls

Reviewed: Oct. 28, 2007
Good and easy, but needs a little extra something and I'm not sure I can put my finger on it. A little kick of some sort. Maybe more mustard, extra onion or even some garlic as the other person suggested. I might try it next time with dijon mustard to see if that adds a kick. I'll definitely make them again.

Asparagus, Chicken and Penne Pasta

Reviewed: Oct. 11, 2007
SUPER quick and easy. The family loved it. I cut back the olive oil a tad to save calories and cut back the red pepper to about half because I thought the kick would be too much for the kids. Easy and light. I'll definitely do this one again.

All-Day Meatballs

Reviewed: Oct. 11, 2007
5 stars with these changes: Added extra 1/2 - 3/4 cup of ketchup with about two tablespoons of brown sugar about an hour before it was done as the vinegar made the sauce too bitter. The extra ketchup and brown sugar balanced it out nicely. I also cooked on high for 5 hours and they were perfect.

Avocado and Tomato Salad

Reviewed: Oct. 11, 2007
Next time use white balsamic as the brown makes the salad ugly. It was just okay for us. I think I would try it again, but would rething the dressing or something.

Slow Cooker Chicken Stroganoff

Reviewed: Oct. 1, 2007
5 stars and then some. This was so good. My kids gave it 5 stars too. I did make a few changes though based on what I had on hand. I also decided to add a little liquid while cooking the chicken as I noticed it looked like it was getting dry quickly. Here are my changes/additions: - added @ 1/2 cup chicken broth with chicken and butter - used a packet of stroganoff mix in place of italian dressing - added another @ 1/2 cup chicken broth after chicken was cooked - used reduced fat cream cheese Turned out great!

Chicken Pot Pie III

Reviewed: Sep. 30, 2007
We love this recipe. I use a can of cream of potato and cream of celery which does the trick. We've used a variety of different frozen vegetable blends and all have tasted fine. I added potatoes that I had boiled so they were partially cooked and it turned out really well. My kids love this one too.

Corn Dog Casserole

Reviewed: Sep. 30, 2007
It's funny, but I like this casserole more than my kids do. It's sort of a mature version of what a corndog tastes like because of the celery and what not. I think it's really good. I make it with Turkey dogs only and serve with ketchup and mustard. It's not something that would impress company, but something different if you feel like not cooking the "normal" chicken casserole.

Cheeseburger Pie

Reviewed: Sep. 30, 2007
This was a hit with my family. I made a few changes based on what I had on hand and would do it the same way next time. Instead of tomato sauce mixed with the meat, I used ketchup. We also dipped in ketchup instead of the cocktail sauce and it was perfect. I also added some minced garlic to the ground beef and onion. My kids don't like green peppers so I passed on them. This is a pretty simple recipe that we all enjoyed. My kids rated it 5 out of 5 too.

Macaroni and Cheese V

Reviewed: Sep. 30, 2007
Not quite creamy enough. I'm thinking condensed milk might have worked better and maybe even some cream cheese. My kids love pasta almost anyway it can be cooked, but this didn't do it for them either. Not a recipe I'll repeat.

Single Crust Peach Pie

Reviewed: Sep. 23, 2007
I'm no pie expert, but with all the input on this one, I couldn't miss. I actually used frozen peaches that I thawed and drained. I tossed the peaches with flour as others suggested, and added a little brown sugar to the peaches too. They just weren't very sweet. Then I doubled the crumble recipe as other suggested and added both cinamon and nutmeg. I had plenty of crumble left to completely cover the pie. I cooked it 450 for 10 mins then 350 for 40 mins and it was perfect. I used the middle rack in my oven and wrapped the edges of the crust with foil until about ten mins before it was done. Oh yeah, this recipe is a keeper especially since I found a way to use frozen peaches. thanks for the recipe.

French Fried Potatoes

Reviewed: Aug. 11, 2007
Wow. I'll never buy bag fries again. I actually kept the skin on them and cut them like silver dollars. There's this diner that we love that cuts them like that. I didn't have vegetable oil so used canola. They did take a little longer to cook probably because of how I cut them. I don't have a fryer, so used a sauce pan on my stove med-high as the other reviewer suggested. Perfection!!!
