Mushroom Quiche

This was not bad. I love mushrooms, but this quiche actually seemed "too mushroomy." So if you are crazy for 'shrooms, this might be perfect for you! But my husband and I thought it was just okay.

Easy and Elegant Pork Tenderloin

Several people mentioned that you need to spice up the breadcrumbs. I didn't see that until AFTER the tenderloin was served, unfortunately. So it's really bland. I can't give this recipe 5 stars when it needs doctoring-up with additional herbs... also, in case you happen to have panko italian breadcrumbs around, in my experience the outer layer will burn before the pork is done - so I recommend no panko!

Campbell's® Skillet Chicken and Broccoli

This was easy, tasty and filling. We used frozen broccoli and added brown rice. It was a little bland, but probably a pinch of salt would have taken care of that (we're cutting back so we skipped it - still good and pretty darn healthy!).

BBQ Chicken Pizza II

I use Sweet Baby Ray barbecue sauce and my own homemade dough, either par-baked or fresh. This pizza always turns out great, as long as the barbecue sauce is thinly spread on the crust (you can always add more sauce to individual slices if desired). I also use cheddar sometimes if I don't have monterey jack on hand.

Best Fried Green Tomatoes

I've tried batter-frying without much success in the past, but these tomatoes ended up with a perfect crust. I used a small sauce pan with olive oil on medium heat, checked the oil with a wooden skewer (look for bubbles), and once the first tomatoes were in, I turned the heat down to medium-low to finish frying the rest (it was a small batch of two servings). I wasn't sure about the olive oil, but the results were excellent. Thanks, Diana!
