Italian-Style Round Steak

Whipped this up this afternoon for our supper! It was great! I would season it a bit more. I doubled it - and I cooked it with all the veggies once I browned it. Served over some noodles! All 4 kids enjoyed and my husband said to make again!!

Hungarian Goulash I

This was absolutely divine! I followed the recipe completely and it was perfect. Reminded me of the goulash I ate in Germany as a child. True comfort food! Making it again tonight, and my mouth is already watering!!

Home-Style Chicken and Sausage

It was very good, the kids (9-4) ate it up - we served it with a side of whole wheat pasta. I did double the recipe. I would add something to jazz it up a little next time.

Blueberry Buckle

Company Couscous

We were out of the vinegar and it still turned out great. Not sure how people think this is bland! I did use chicken broth, and fresh basil! We loved it! I will make this again! Thanks for a quick & easy recipe!

Easy Tilapia with Wine and Tomatoes

I have made this twice now and it is a great recipe. We try to use the fresh basil - it makes a huge difference! I did saute some red pepper and red onion with garlic to drizzle over the fish before baking!

Chris' Bay Area Burger

This was my second time to make these. We all enjoyed them. Last time I used basil, this time we were going to put green chilis on them and pepper jack cheese, so I used cilantro as my dry seasoning, otherwise everything was the same. They were very good!

Coffee Ice Cream

WOW!! This was fantastic!! I was looking for a recipe that was on par with Ben & Jerry's or some other high end ice cream. This was it! I did add some chocolate/carmel pieces about 1/2 way through the freezing period. I will add heath next time! I also swirled in some caramel sauce. I followed the suggestion to stir every 1 1/2 hours during freezing to eliminate the ice crystals and it worked - our was smooth and creamy - just wonderful!! Thank you for this great recipe!!

Roasted Beets and Sauteed Beet Greens

This was the FIRST time I ever tried beets. We all loved this recipe - my four kids (2-7) loved them and had several servings!! I added some roasted potatoes, peppers, carrots & onions. I used 2 pans - one for the beets and one for the other veggies!! Very Good!!

Morning Glory Muffins I

I made these a while ago and recently found the recipe again. A great muffin! My 4 young kids love them - even my husband was sneaking them!! I plan to make them again with lots of different variations. These muffins are so easy to use different healthy mix-ins for variety! I did use pumpkin butter instead of apple and I added ground flax seed, and dried cherries. Again - SO GOOD!!

Hot Cocoa Mix

Not sure 5 stars is right because of all the modifications ... but here goes. I followed someone else's suggestion.. a full bag of pow sugar, a full tin of cocoa and 2 1/4 cup creamer (1 cup french vanilla, 1 1/4 cup regular). I also put in the food processor to mix -and this made it very smooth - it dissolved quickly. It will make great gifts!! Thanks for the starting point & lots of suggestions from others! Enjoy!

Beef Barley Vegetable Soup

Well, I started this about 1pm today for supper and also skipped the slow cooker since time was a factor. I used boullion and water and hoped it would be okay. I also used petite diced toms instead of stewed (did not have those) I doubled the veggies (fresh) and it is amazing! My kids and I just sampled it and my 18month old is begging for more and my boys all gave it 5 stars and want dinner now!! So thanks for the great easy recipe - I know my husband is salivating on his way home thinking about supper!!

Baked Ziti I

We had this last night for dinner. I actually made a marinara sauce from my Cooking Light Mag - and I mixed in some ricotta with the sour cream. This was fantastic! I loved the sour cream flavor and the tartness it added. All of my kids (4) loved it and we are having it for lunch today!! Thanks for the great recipe!!

World's Best Lasagna

This was a good recipe - I did cut the salt down and it was still too salty for me. It did not hold together, but I take responsiblity for that. Good flavor and we enjoyed it - not quite the perfect one though.

Salsa II

I wanted a peach salsa recipe (for chips not grilling) and could not find one, so I took this one, added equal amounts of tomatoes as peaches. I omitted the red onion since I did not have one. I did not seed my jalapenos -well it got REALLY hot, but I just doubles everything else and now it is great - nice flavor and a great kick! I added about 1/4 of sugar too. Thanks!!

This was very easy & everyone has been raving about the gifts I gave them. I pulsed the pears in my food processor to ensure they would fine and not chunky. I let it cook on low for a long time. I will definitely make this again! Thanks for the great recipe!

We ate this tonight, my husband does not like meatloaf but had seconds. It was very good. I took another's comments and added ketchup, mustard & brown sugar to the top. I will be making this again!

Baked Tilapia in Garlic and Olive Oil

I loved this recipe, however, I made a few minor changes. I minced my garlic and diced my onions very finely. Then I put them in a small bowl (custard cup) and added olive oil and then microwaved it for a minute. The poured that the fish and left it in the fridge for 24 hours. I baked it for 25 minuted regular and then added fresh parmesean cheese for the last 5 minutes. My 3yr old and 2 yr old eat this better than chicken and usually eat more than one piece each. This is a regular on our menu.
