Apple Pecan Cornbread Dressing

The entire table agreed this was the best dressing we'd ever had! For the first time in my life, there was no leftover dressing at the end of the day. I substituted 1 cup raisins for the celery (I had two celery haters at the table -- the raisins tasted great with the apples, I definitely recommend this even if you're using celery too) and used only 1 1/2 cups apple juice.

Gingerbread Cupcakes with Cream Cheese Frosting

Bread Pudding II

Delicious, and so easy! I used day-old French bread torn into small pieces. As others suggested, I cut the number of eggs down to 3, but left everything else the same. A perfect treat for a cold night!

Banana Muffins II

Tangy Pineapple Chicken

This was delicious and so easy! I used sesame oil instead of vegetable oil, and cut the chicken breasts into large chunks so it would cook faster. I also used a fresh pineapple plus some canned pineapple juice. The mustard and pineapple are a great combination!

Tomato Vodka Sauce

Great recipe! I used canned crushed tomatoes instead of diced and wound up with a lovely, thick, creamy sauce. I'll definitely be making this one again!

Blissful Rosemary Chicken

Elegant and easy! If you refrigerate this, though, be very careful to make sure the chicken cooks all the way through in the baking time recommended. Mine was a bit raw in the middle of the "roll."

Cheesy Polenta

I've made this a few times and it always turns out great. I prefer it with chicken broth, but using water and salt if you don't have any handy works just fine as well. Cheddar tastes good in this recipe, but if you really want something special, try substituting goat cheese -- the flavor and texture is amazing!

Bacon and Tomato Cups

These were phenomenal -- I'm going to make them for every party from now on! I only used enough mayo to moisten the mixture, and I think that was a good call. Also, I couldn't find a 16oz can of biscuit dough, but 12oz of dough (ten biscuits, 20 cups) worked just fine.

Apple-Onion Pork Chops

The basic flavors of the recipe are good, but I think the recommended cooking times are much too long. My onion-apple mixture turned out completely mushy and my nice, thick pork chops ended up dry and overcooked. Maybe cutting down the cooking time and/or adding more liquid to the recipe might make this one better.

Cinnamon Supper Cake

Delicious and different! You definitely don't need as much topping as the recipe suggests -- a little sprinkle of cinnamon & sugar is all you need. I also added 1/2 tsp. cinnamon to the cake batter -- gives the cake a nice color and flavor.

Butter Chickpea Curry

Excellent! I took the users' advice and only used 2 potatoes, which I think was plenty (I used large russet potatoes). Otherwise I followed the directions exactly as written. This was absolutely delicious, thanks for sharing the recipe!

Hot Artichoke and Spinach Dip II

A good start -- however, I felt the dip needed a lot more spinach than the recipe called for. Otherwise it's mostly just hot cheese with a few pieces of spinach and artichoke mixed in (which some people prefer, I know!). I used 1 1/2 cups fresh baby spinach and still felt it could have used more. Doubling the garlic is also a good idea!
