Scrumptious Sweet Potato Casserole

Family favorite every year! Even the people who don't like sweet potatoes love this. Tastes more dessert-like than a vegetable...Sub Splenda blends for sugar to make slightly healthier.

Waffles I

Best waffles, ever! my kid constantly begs for these. One tip...separate eggs and beat whites until foamy for fluffier waffles! Also, I up the vanilla to 1 teaspoon and sub Splenda for sugar.

Chocolate Mint Cookies I

Wonderful cookie! My 7-year-old is begging for another today, Christmas Eve, I am baking MORE cookies. He loved them so much he wanted to help me make them so he could "learn how"... Highly suggest using Andes mints and pressing half wafter "into" the cookie a bit...will "break" the top a little but it's fine when it cools... Also suggest rolling your dough balls, then storing in refrigerator until they get more firm. Took straight from fridge to oven and cookies seem to set a little "higher" when they baked... Made these for a cookie exchange and they were wonderful!

Oregon Salmon Patties

My husband loved this! That's a good sign... I made it with a couple of exceptions: Drained most of the juice from the salmon...added a heaping teaspoon of mayonnaise to the mixture...and a couple of sprinkles of garlic powder in the mixture. Then, for the breading, I used cracker meal and added a couple of shakes of black pepper and a shake of garlic powder and stirred it up well.

Mexican Casserole

This is one of our favorite new recipe finds!! Every time we have company now, I make this...and people eat it up! The only changes I make is that I use Chili-O seasoning instead of straight chili powder...and I use closer to 3 tablespoons than 2... I also cover the casserole for the first 10 minutes, so the top of it doesn't get as crusty. Other than that, it's an absolute keeper!!
