Simple Whole Wheat Bread

Slow-Cooked Chili

I was looking for a quick chili recipe that would cook while I was in class, and this is by far the best and easiest chili I have ever had! I took it to a study group that night, and my friends raved about it -- even those that said they usually don't care for chili! I tweaked it a little bit.. I added some frozen corn (about 3/4 of a cup), and I added some beef stock (about 2 cups). I also bought four dried chili peppers, cut the ends off, and stuck them whole in the chili to fuse it with some smoky sweet spiciness. I also used diced tomatoes that had spices added to give it a little extra flavor. It was a little watery after cooking on high in the crockpot for four hours, so I transferred it to a large pot and let it simmer for 45 minutes. By then, it was perfect! Thanks for the great recipe!

Middle Eastern Rice with Black Beans and Chickpeas

This was an excellent recipe! The only thing I did differently was to add spinach with the beans. I served it on a piece of naan (Indian flatbread) and topped it with a dollop of yogurt and a squeeze of lemon, which brilliantly accentuated the flavors of this dish. My husband loved it, and he is not normally a fan of beans!!

Yummy Vegan Pesto Classico

I have made this recipe three different times; it's THAT good! First, I made it according to directions and ingredients. Then, the second time, I ran out of basil, so I added some kale, and it was still delish! A great way to sneak those green leafies in there! The third time, I ran out of pine nuts, so I subbed some walnuts for a portion of the pine nuts, and I did mostly kale with only a little basil for the flavor, and it was still amazing! This is a fabulous recipe -- thank you!

Real Hummus

Raw Hummus

I was really disappointed with this. I try to incorporate a large amount of raw, living foods in my diet, and I sprout beans and grains often. Unfortunately, even after it sat in boiled water for a few minutes, the beans (and the resulting hummus) tasted like grass! It's edible, but not yummy. Did I do something wrong to the beans? I'm not sure. I may experiment with it another time, but I am not happy with this result.

Since we're vegan, I left out the milk and bacon and used earth balance instead of butter. However, I added a couple shakes of liquid smoke to impart a smokey flavor similar to that imparted by the omitted bacon. It was delish!

Pumpkin Curry with Lentils and Apples

I bought a sugar pumpkin at the store today and could not wait to use it in something! I came across your soup recipe, and I started to cook it before checking that I had all of the ingredients... I was amazed at how well it turned out anyways!! I had no lentils on hand (which is rare!), so I used a combination of small red beans and also great northern beans. I also didn't have any stock, and instead of the tomatoes and broth, I used a large can of tomato puree. I also completely forgot to add the spinach, but it was still delish!

Ten Minute Enchilada Sauce

I halved the chili powder and doubled the other spices as suggested and also added a dried chipotle pepper to simmer in the sauce. YUM!
