Wild Rice and Asparagus Chicken Breasts

Excellent! Very simple but very tasty. I to modified it some, but not a lot. I used honey instead of brown sugar, and added water chestnuts and bamboo shoots, which resulted in me having to make a little more of the Hoisin sauce mixture. For even faster prep I used bottled minced garlic and ginger to flavor the oil.

Crispy Edamame

My God these were amazing!! First bite into them they immediately reminded me of these french fries I used to order at a certain restaurant, with that perfect balance of crispness and chewiness. I only made a half recipe first time around, patted them dry after thawing, used garlic salt, fresh cracked pepper from a pepper mill, and rest of ingredients on list. I had to bake mine for around 22-24 minutes instead to get them to crisp up, but thats what made them have the perfect texture. Will definitely be making these again!

Vegan Brownies

These are very good, with a little modifcation! These were actually my first attempt at Vegan baking, and I was quite proud of how they turned out, despite the fact I had completely forgotten to add in the vanilla extract! Here's my version of the recipe: 2c unbleached flour, 1c white sugar, 3/4c brown sugar, 3/4c cocoa powder, 1ts baking powder, 1ts salt, 1c chocolate soy milk (in place of water), 1/2c canola oil, 1/2c sweetened applesauce, and if I had remembered, 1ts vanilla extract. I also baked mine at 315-320 degrees for about 20 minutes as I have to under bake everything in my oven because if not it will burn easily, and they turned out perfect! Will definitely make these again.

Downeast Maine Pumpkin Bread

Amazing!! The fact that this recipe doesn't call for fattening ingredients like butter is nice. Also, use canola oil instead of vegetable oil for an even healthier version. Here's how I modified the recipe, using only a 1/2 cup CANOLA oil, 2 cups white sugar, 1/2 cup brown sugar and 1/2 cup SWEETENED applesauce and kept everything else the same. Definitely a keeper!

Balsamic Vinaigrette

Excellent, basic recipe for salad dressing and tastes MUCH better than the bottled varieties. I only made one serving, (being that I live by myself) using 1 TBS of each olive oil, balsamic vinegar, splash of regular vinegar, several dashes of garlic salt instead of crushed garlic and reg salt, fresh cracked pepper, couple dashes of ground mustard and didn't add sugar as I like the strong tangy-ness of the vingars. Made the perfect amount for a medium to large salad for one. Also, try topping salad with toasted, sliced almonds with this dressing, superb!

Green Tea Muffins

These were really yummy! I didn't use walnuts in mine as I don't like nuts in any of my baked goods, and used light vanilla Silk instead of milk. I had to bake mine for about 30mins total as well. They came out a dense, moist muffin with a delicate flavor. Will definitely be making these again!

Lemon Pepper Green Beans

Very delicious! I actually cut the green beans back to a 1/2lb and added a 1/2lb of fresh asparagus to it, and used olive oil instead of butter which actually tasted better in my opinion. Very easy to make too!

Mushroom Soup Without Cream

This is excellent soup recipe to begin with, but adding in the fact that this is also a great Paleo and Primal, gluten- and grain-free alternative to the cream and barley based ones. Since I didn't have any leeks on hand and had a bunch of celery to use up, I instead modified this using the following: 2cups of carrots, onion and celery, 2 cans of sliced mushrooms, 1 quart veggie stock and 1 quart chicken stock, 1tsp dried thyme, and garlic salt to taste. This turned out wonderful and filling and am very happy to come across this recipe.

Stuffed Mexican Peppers

These are excellent! I used extra lean ground beef and sliced reduced fat cheese instead (because that's what I happen to have on hand) to make it a bit healthier and they were still very good. I also only had a 1/2lb. of the ground beef so I doubled the rice, and only used 1/2 of taco seasoning packet. I took another reviewer's advice and broiled my peppers about 2mins each side, gave them a nice flavor.

Cheesy Quinoa Pilaf with Spinach

This was super yummy! I used pine nuts and regular crumbled goat cheese when I made it, and used less olive oil (about 1.5 TBS), and more spinach (about 1 cup). I will however next time making this use less cheese as I thought it was too rich and somewhat over powering the other flavors. Also, to make the prep easier with the quinoa, just add 1/2 cup water to the 1/4 cup quinoa, bring to a boil and then reduce to a simmer for 15mins. This way, the liquid absorbs on its own, and you don't have to drain it if you don't have a fine mesh strainer, much easier and quicker to do.

All-Around Good Smoothie

Very tasty and filling! NOTE: Use ground flax seed instead, blends better and better for the digestive system. I also used 1 cup milk, vanilla fat-free yogurt and 2 TBS of ground flax seed instead. I even taped the recipe onto the cupboard right above where I keep my blender for everyday use :)

Baked Ziti I

This is the absolute best! It also makes quite a bit, so I only prepare a half recipe (being that I am the only one eating it) and it still lasts me all week for lunches. I also add in extra spices to the sauce, chili powder to taste (a must for really good spaghetti sauce), garlic powder, oregano, etc. until I feel it has an explosion of flavor.

Homemade Black Bean Veggie Burgers

These are always superb. I follow the recipe verbatim and they turn out perfect. I found that the best method to preparing these is to bake them (for about 30mins as well); I've made them by frying in a pan, and throwing them on my George Foreman grill (I don't have a regular grill), both are which still good, but I like the baked version better. And yes, make sure to squeeze the onions/pepper/garlic mixture in a mesh strainer and blot with paper towels to rid excess water, the mixture turns out nicer and holds together better. A definite fav.

Nut Burgers (Vegetarian)

This is a good veggie burger recipe, although I found that it made "4 servings" or large patties rather than 2 as written on recipe. I do also believe it needs a lot more spice, they tasted just a little too bland for my tastes but found that when reheated the next day the texture and taste was a lot better than when first making them. As for the crumbling and falling apart, try adding in "vital wheat gluten" if you're not allergic to wheat products; it helps hold them together. Next time I will add in more onion, minced garlic, seasoning salt and whatever else my spice cupboard entices me to.

Lemon Thyme Rice

If you have a rice cooker, use it for this recipe!! I only gave 4/5 stars because it needed modifications. I used 1 Tbs. of dillweed instead of thyme, and 3-4 Tbs. of lemon juice. Threw all ingrediants in rice cooker, flip the switch and let the cooker do its thing. The rice came out with a slightly sticky texture in which I love, but overall I will definitely will be using this one again!!

Acorn Squash with Apple

This was pretty good! Although after several attempts at cooking acorn squash, I finally realized that this particular squash just isn't for my taste buds, prefer the butternut variety much more. The apples however, were to die for; wow they were so good in this recipe! I also found that only 6 minutes in my microwave was sufficient in cooking the ingredients, after stirring I taste tested it and the apples were already soft and tender, no need to pop it back in for another 7 1/2 minutes. Will definitely make this recipe again, but perhaps with a different variety squash or just use apples instead for a sweet treat.

Florentine Tomato Soup

Good base recipe, but definitely needed some extra kick with seasonings. Instead of bouillon and water, i added a can of reduced sodium chicken broth, then a 16oz container of frozen homemade chicken broth with onions and garlic. I also added a 6oz can of tomato paste to equal out the thickness of it, extra fresh cracked pepper, italian seasoning and extra minced garlic. Came out much more flavorful. Served with shaved Parmesan cheese and a dash of cracked pepper as others suggested.

Microwave Baked Apples

Good base recipe, but first time around I wasn't too impressed because I thought the nutmeg was overpowering, ground cloves were much better (and tastier). Also, don't use salted butter or vegetable spread, the brand I have made it have a salty taste to it. But overall an easy snack and will make again :)

Egg Sandwich

Good base recipe, but as others have said, very bland as is. I chop up 1 cooked, veggie sausage patty then mix it in with the egg mixture then microwave it. After topping the mixture on the bread, pop it back in the toaster oven for a few seconds for cheese to melt. I sometimes also add a few drops of hot sauce on top before eating, pretty tasty this way.
