Classic Macaroni Salad

This was easy and tasty. I made this the day before and I ended up making a little more of the "sauce" just before I took it to my potluck because it seemed a little dry. Next time, I'll just make the extra at the same time and pour it over just before serving. Then I don't have to do double duty!

Scalloped Potatoes and Onions

This was a great recipe! My dad is 99% vegan (he'll eat a little butter or milk if it is in a cake etc) and so I cut the mayo to 1 tbs and will probably leave it out next time. I also changed from chicken broth to vegetable broth. It was creamy and tasty. I used more pepper than called for and I think I, too, will add garlic and maybe some fresh chives next time.

Very good dish. I didn't bother with the roasting of the skin, but just peeled it and did everything in the skillet. I served it over basmati rice and it was filling and tasty!

Wild Rice Turkey Dish

I used Zataran's Wild Rice and Long Rice Mix which comes seasoned; was extremely tasty! I think I will add less water maybe only 1/3 cup next time because it was a little wet; although this evaporated as the dish sat. It could have been because I baked it with a cover. I also opted to leave off the bread crumb/butter mixture as I am trying to limit my calorie intake. I took this to a church potluck and had several positive comments on it.

Simple Raisin Pie

I traded some work for a pie. When I asked what pie he wanted, he said Raisin Pie! Oh, no...I had never even heard of Raisin Pie! I found this recipe and tried it. I substituted Splenda for sugar because he is diabetic. It was easy and he loved it; said it was almost as good as his mother's. I don't like raisins so didn't try it.

Oatmeal Raisin Cookies VII

Very good bar cookies. The hardest thing was to get them to spread out in the pan as the dough was very heavy and sticky.

Oven Fried Chicken IV

Loved this recipe. I added spices to the sour cream and substituted italian seasoning for the rosemary. The next time I do this recipe, I will try turning the chicken over once during the baking process. I found that while the upper surface was nice and crispy, the bottom surface was a little on the "wet" side from the dripping juices. Very moist!
