Lentil and Green Collard Soup

I just made this. I think the garlic should have been cooked with the onions to get rid of the raw garlic flavor. Beyond that, it's not a bad soup but I think there is something missing so I will not make it again.

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

Byrdhouse Blistered Cherry Tomatoes

This makes a very nice & very quick side dish. A good way to eat more tomatoes than if they were plain. And, any herbs that work with tomotoes will do.

Kale and Adzuki Beans

Yummy! I used canned garbanzo beans and I only had 1/2t corriander so I used only 1/2t cumin too. Quick, easy and healthy.

Spinach Stuffed Chicken Breasts

Yummy! I used lite mayo to cut the calories and instead of bacon I brushed on EVOO and lightly coated with ground panko. Also I used fresh wilted spinach. Very nice meal, my hubby says it would be good enough for company :-)

Rosemary Roasted Pork Tenderloin

Just one bite and Hubby said "this is company worthy"! Horray, an easy and elegant dish I can prepare the night before a dinner party and just pop in the oven while we enjoy cocktails. I made just one tenderloin and used all the marinade which I cooked and served along with the meat. I think however that next time I will lighten up the dijon just a bit and add just a bit more apple cider which I used because I didn't have the apple juice concentrate.

Mozzarella and Tomato Appetizer Tray

I took this to a party and they quickly disappeared. I cubed the cheese to fit on toothpicks and just treaded all the ingredients starting with the caper,then half of a cherry tomato, red pepper then cheese and spooned the pesto over it all. I did this hours in advance. Very pretty.

Grilled Salmon with Avocado Dip

The salmon with lemon pepper and dill was fine. The avacado dip is basically a poorly flavored guacamole. And although my husband and I love salmon and guacamole (which is why I tried the recipe), the dish gave us both indigestion :-(

Pistachio Crusted Chicken

My husband said "Wow babe, this is company worthy!". I followed the recipe but reduced the olive oil a bit,baked for 20 miutes. Moist & yummy. Next time I may increase the mustard and honey just a bit.

Cream Cheese Penguins

Sooooo funny! Guests played with them more than they ate them. I used herbed cream cheese to liven up the flavor. Tasty and lots of fun. I'll definitely make this again.
