Tomato-Dill Shrimp Stew

Wow! REALLY yummy. Loved the fresh herbs, great way to use them up from your garden. Pretty easy to make too. We put it over rice.

Italian Kale

I'm sure it would have been much tastier if I didn't burn it. Smelled lovely in the pot. I think it just needed some more water... make sure you keep enough water while steaming the kale!

Great. I used a mix of Jonathan, Golden Delicious, and Northern Spy. Doubled the recipe and used 12 apples, no sugar. Added some nutmeg, vanilla and a shot of brandy.

Delish! I used pears that weren't quite ripe (from our backyard), so I had no problems with mushiness. Makes A LOT!!

Vegetarian Stuffed Bell Peppers

It wasn't spectacular. But I did like that it's pretty light and simple. Per other suggestions, I mixed the cheese right in and added a little Italian seasoning.

Chicken Stew With Coconut Milk

This was so easy and so tasty. I omitted the carrots and used spaghetti sauce instead of tomatoes. I also used chicken seasoning with water instead of chicken broth and substituted in sweet potatoes. Okay, okay, pretty different but I'm a poor college student!! If I could choose I probably wouldn't omit the tomatoes, but I'll make it again with sweet potatoes--kicks it up a notch! I had it with basmati rice and the chicken was SUPER tender, and so were the potatoes. I cooked it uncovered (no lid) and it was done in 24 minutes.

Chicken and Snow Pea Salad

Wow, this probably IS the best chicken salad I've ever had! I used green onion instead, and I used lime juice instead of the zest. I suggest adding a bit more lime if you like; I did and it turned out really nice!
