My Favorite Mexican Rice

I've never had any luck making Mexican rice. I used this recipe and omitted the cheese. Good flavor! I adjusted the rice to 1-1/2c and used 1/2T (1-1/2t) of salt, adjusted the stock and sauces accordingly. Very happy w/recipe and is the best one I've made todate (I'm still hoping to find a 5* recipe).

Dutch Apple Pie

I don't bake, but this recipe is awesome! I didn't use parchment paper (because I don't bake and don't stock it)! I also used thick sliced red delicious apples (because that's what I had on hand) I used brown sugar in the topping mixture, and reduced the cooking time down to about 40 mins, even the neighbors loved it!

Mama D's Italian Bread

A novice bread maker (by hand), I tried this recipe and found the bread to be dense much like a peasant bread w/a good crust. I used a cookie sheet w/water beneath the bread in lieu of misting (much like the german brotchen method). I learned about proofing (oven light) and should of used a loaf pan as it flattens out. I also used 7c of bread flour vice all purpose flour and more to knead as req'd, about 8 c in all which may have been a bit much. Any workarounds to get it to be less dense would be appreciated.

Honey Smoked Turkey

My 1st smoked turkey, wonderful! For a 12 lb bird (breast side down)I used a Brinkman Smoke-n-Grill charcoal 2 layer smoker (w/seperate water pan) and soaked hickory chips. No tin foil tenting required! I used 2t dry (vice 2T fresh) spices and did not soak in brine. I let rub sit overnight and got under the skin too! I filled the cavity with celery, carrots, apple and orange qrtrs, discarded when done. I allowed 30-40 mins per lb for cooking, flipping the bird (lol) after 3-4 hours breast side up, adding charcoal as needed. No burning, moist! For bigger birds I recommend using an o/nite brine soak and an indirect heat (barrell type smoker w/seperate fire box) charcoal smoker (~$88 on sale) with a coffee can of water, applejuice, wine, beer whatever! Being my 1st smoked bird, I have nothing to compare it to, soo the **** rating... Try this now! :)
