Kickin' Collard Greens

Reviewed: Jan. 22, 2011
WONDERFUL balance. Hint: a great way to 'tenderize' greens is to pop them into the freezer. Once frozen, they are very easy to chop and cook up more quickly

Tomato-Cream Sauce for Pasta

Reviewed: Dec. 25, 2009
Very easy and so delicious. Not heavy like so many pasta sauces. I might even turn it into a tomato soup.

These were a big hit at our Christmas party at work. So crunchy at light with a nice bite of spice. And very easy to make.

Aunt Mary's Chocolate Cake

Reviewed: Dec. 25, 2009
Just made this for our Christmas dinner. FABULOUS! So moist (wrapped in plastic as another reviewer suggested). The batter was very liquid, but baked perfectly. I did add about 3T baker's cocoa. Topped it with chocolate butter cream, whipped to be extra fluffy. The cake didn't need a heavy frosting. This will be MY chocolate cake recipe!

Nonnie's Persimmon Pudding

Reviewed: Dec. 4, 2009
Wonderful! Every Holiday we try at least 1 new recipe. This was by far the biggest hit! When my store got in Persimmons, everyone ask me what they were used for. Of course I searched allrecipes and found this one to be most interesting. It really show cased the flavor of persimmons. The texture was perfect, the flavors unique. So easy to make. Not sure about the sauce. I used Wondra rather than all purpose flour and it turned out gel-like. (cooked too long?) We liked it anyway. Nonnie's Persimmon Pudding will be on our menu from now on. Thank you so much!

Chicken Flautas

Reviewed: Nov. 7, 2009
Easy and Perfect just the way it is. It will be as bland or spicy as the picante sauce you use and the freshness of your cumin. I grind it as needed. If you want to drop the cheddar and go with white cheese, consider one of the Mexican melting cheeses or cheese sauces. Very simple. If you warm the tortillas and/or use extra thin ones, they are more pliable and the amount of oil listed is plenty.

Pizza Dough I

Reviewed: Jan. 16, 2009
I've had a bakery for many years. We think this is a simple, delicious recipe. It always works. As in all cooking, the key is fresh ingredients: good flour, good yeast, clean water. Keep it simple and fresh. Treat your dough with respect. Good recipe!

Lamb Ribs with Honey and Wine

Reviewed: Oct. 15, 2008
Wonderful! We slowly BBQ the ribs over hardwood, which eliminates the fat. The marinade is simmered to reduce and basted on during the last 15 min of cooking.

I have to add another review. After making this at least 10 times, the dogs go wild. It ALWAYS is great, even if I have to substitute ingredients. My dogs have allergies so they really enjoy a treat that is yummy AND healthy!

Jaeger Schnitzel

Simple German home cooking. My husband has been wanting this since the 70's. Helene's recipe brought out lots of memories. Easy to play with (veal, pork, beef). We never make it the same way twice. Always comforting and delicious. THANKS!
