Kale, Swiss Chard, Chicken, and Feta Salad

This salad was fabulous, and just what we needed after the holidays and too many sweets! I subbed a thinly sliced bosc pear for the raisins since my daughter doesn't like raisins, and used red wine vinegar in the dressing. Used marinated feta. Otherwise no changes. Super good!

Most Requested Banana Chocolate Chip Muffins

This recipe is great! Needs no adjustments. I have made these at least twice, and followed the recipe both times (rare for me, but it's great as written). My daughter said they were not too sweet, "grainy" and delicious! The freshly ground flax seed really adds alot to the recipe.

Flan II

I followed other reviewers' suggestions and just used 4 whole eggs for this, along with half whipping cream/half milk, and a 1/2 tsp of vanilla. Superb! I am so happy to find this recipe that doesn't use canned milk. The texture and flavor was much better than another recipe I tried before. It was so smooth and creamy. Did have an eggy flavor, but that's to be expected. Thanks so much for sharing the recipe!

Broiled Tilapia Parmesan

Had this for dinner tonight, and realized that I haven't rated it. This is so good. I add about 1/3 cup of italian bread crumbs to the topping, which we really like - gives it a cheesy, flavorful top crust. It's ready so quick, and is a great dish for company!

After-Thanksgiving Turkey Soup

Really good. This hits the spot, and as Valorie said, our family looks forward to the soup more than the bird. Works equally well with a leftover chicken carcass. I usually add a wild rice blend, and generally double the rice for a more hearty soup (I usually end up with more stock as well, so it probably evens out in the end).

Vegetables with Brown Rice

We loved this! I'm a walnut freak (according to my teenagers), and was looking for a way to use some leftover rice. This recipe is great because any veggies you have are good. We used a squash, zucchini, 1/2 red pepper, and a hand-ful of asparagus. I had left-over rice, so just added it to the veggies to steam with a little extra water. Will definitely make this again!

Homesteader Cornbread

Loved it! This is a very moist, tender cornbread. Not crumbly like the recipe I've been using for years. I didn't add the whole 1/2 cup of oil - more like 1/3 cup instead... I might try upping the cornmeal more next time, but it was a great recipe as written.

Quick Coffee Cake

This was great! I took other reviewers' advice, and added an additional 1/4 cup milk and doubled the sugar. I also added one apple, cut up. We like the apple, but I think for next time I'll back off on the sugar a bit (closer to the original recipe), and add walnuts with the apple. A great recipe when you're in a hurry!

Apple-Nut Coffee Cake

This was awesome, though I have to give it 4 stars, as I changed it a bit... Here are my changes: used butter flavored shortening, and didn't have quite enough, so I added a couple of Tbsp plain yogurt. Also, used one jumbo Courtland apple (sweet rather than tart), and added a little cloves and nutmeg. We loved it! My husband said it was hard to stop eating, and between the two of us we polished off 2/3 of it. I would definitely double this recipe for our family. Here's my latest version of this recipe - 2 bosc pears instead of apple, 1/4 tsp each of ginger and nutmeg instead of cinnamon, substitute yogurt for half of the butter, reduced sugar to about 3/4 cup - delish! This is a great base recipe that can be customized with many different flavors, and it's quick to make too. Thanks!!

Pignoli Cookies I

I've never tried Pignoli cookies before, but they looked interesting, and I love both almond paste and pine nuts, so I thought they were worth trying. They are great! A little sweet, but I did add 1/4 tsp salt as suggested by other reviewers, and I'm glad I did. I also used more pine nuts than called for. Just mixed these in a bowl with spoon/hands, baked on a regular old cookie sheets without any foil, parchment, or cooking spray and they came off just fine. Thanks so much for a great recipe!!

Cinnamon Ice Cream

We just made this over the 4th of July weekend. WOW. The custard was so thick, and the ice cream turned out just like the pros - no ice crystals at all. I did think it was a little too sweet, but my family loved it. We tripled the recipe, and then cut it into 2 batches - just right for our 1 1/2 qt freezer. I will try using this recipe as my base with other ingredients. Thanks!!

Strawberry Coffee Cake

I made this recipe with fresh strawberries this morning, and everyone loved it! Only changes I made were substituting apple sauce for the melted butter in the batter and reducing the butter in the topping slightly. I also doubled the recipe and baked 50 minutes in a 9x13 pan. Will definately make again and with other fresh berries! Delish!

Cornmeal Strawberry Cake

This was really good! I made it in the spring before strawberries were available, so I tried it with a package of frozen cranberries and it was delicious.... Also, used my "bloody butcher" cornmeal (red). We plan to try it with strawberries, but I'm sure any fresh fruit would be good.

Almond Rhubarb Coffee Cake

Our whole family loved this! I did substitute almond extract for the vanilla and apple sauce for half of the oil, but otherwise followed the recipe. It needs about 10 more minutes baking time if you use a 9x13 pan instead of 2 9" round pans (which I didn't have). Fabulous!

Gorgonzola and Wild Mushroom Risotto

I made this for dinner tonight along with some steamed broccoli. The broccoli was a nice contrast. I omitted the white wine since I didn't have any on hand, and used a mix of wild rice and 5 other types with some homemade dark brown chicken stock. Mushrooms used were portabellas, morels, and some dried mushrooms (bought in bulk and I no longer remember the type). Took longer to cook because of the brown and wild rice, but we enjoyed it! I'd like to try this again with a nice venison roast...

Mocha Ice Cream

This was our first attempt at homemade ice cream in several years, and the whole family loves it. I may add extra cream next time, as it was a little hard to scoop, but the flavor was great. We added slivered almonds to one batch and m&ms and peanut butter to another.

Herald's Impossibly Easy Cheeseburger Pie

My family loved this, but I did make some changes to the recipe. I used a can of tomatoes/chiles as suggested by another cook, and added some hot sauce and chili powder to the meat mixture. I also added 1/2 can of corn to the meat. For the topping, I used a box of Jiffy corn muffin mix, prepared according to the directions on the box, and added the other 1/2 can of corn to this. I sprinkled some extra cheese on top, and baked. The sweetness of the cornbread topping really complemented the slightly spicy meat, and my whole family loved it. It was a winner!
