Spicy Garlic Lime Chicken

I make this all the time! I always triple spices (all but the salt). This is one of the best, easiest chicken dishes I've ever made. A+

Good Old Fashioned Pancakes

Too salty (used half the salt) but otherwise these are the fluffiest, TASTIEST pancakes ever. These shame any boxed pancake mix. Adding to the permanent recipe file.

Fried Onion Rings

Excellent base recipe! I also dredged the onion rings in flour before dipping them in the batter-- great idea to help the batter stick. Definitely need to add salt, and some spices if you're up for it. I used 1/2 tsp garlic powder, 1/4 tsp seasoning salt, and 1 tsp cajun seasoning and some freshly ground black pepper. We still had to salt them after frying them, an easy problem to fix next time. This batch was enough for one large onion. I pan-fried these in about two cups of canola oil, had to flip some of the large ones once. We dipped these in the sauce from allrecipe's Blooming Onion and Dipping Sauce. What a special treat for our family! And we didn't have to step foot into a certain steakhouse!

Black Forest Parfaits

A great easy dessert that I used in a pinch! I added 1/2 tsp almond extract to the milk/pudding mixture for additional flavor, but followed the recipe otherwise. I was only able to get four desserts out of it (used an 8 oz tub of whipped topping), but I made them with tall drinking glasses, which is all I had. The pie filling ended up tasting tart next to the pudding and cool whip. I think it may have been better with a half a jar of maraschino cherries (or even a full one if you don't care about calories!) instead. We'll try that next time. It certainly satisfies a sweet craving! Thank you!

Chewy Chocolate Chip Oatmeal Cookies

Added 1 T. Amaretto to recipe; otherwise followed recipe exactly. Ended up doubling batch to have enough to eat now and freeze for later. This has become our new Chocolate Oatmeal Cookie recipe. Thank you!

Cincinnati Chili I

Like other reviewers I also boiled the beef in broth first, with all the spices and saved the onion for topping later (green onions or red onions when I have them!). Added 1 T white sugar and 1 tsp. salt to suit our tastes, and only had unsweetened cocoa powder in, so I used 1 1/2 tsp. Although I am not a Cincy native, without these changes it tasted like "something was missing."

Broccoli Cheese Soup

My first attempt at Broccoli Cheese Soup and it was a success! Only change-up was I used Smart Balance butter sticks (50/50 butter/spread) and it turned out cheesy and delicious. A perfect companion for our BLT sandwiches at dinner tonight!

Beer Batter Fish Made Great

My first attempt at beer batter, and boy did I find a good recipe to use! I also cut back on the salt to about 1 1/2 tsp. Will definitely use this every time we fry fish! BYW, you can get away with pan frying this in about a half inch of oil! -- just be sure to flip after five minutes.

Chicken Breasts in Caper Cream Sauce

This has become my new recipe for Chicken Piccata! My husband does not care for dill but LOVED it in this recipe. Don't be afraid to try dill-- it just adds an extra something, whether you like it or not. Like some other reviewers, I created a white sauce by making a roux with flour, then added milk, just to cut back on the calories. But cream would be an amazing treat! Defintely a keeper!

Greek Chicken Pasta

Excellent! I was looking for a side dish so I opted out of the chicken and added kalamata olives and sundried tomatoes, according to other reviewers. Used fresh herbs-- basil and greek oregano. Also made a half-pound of pasta (rigatoni) which was the perfect amount. Served cold. Will be adding this one to the recipe box!

Never Enough Green Bean Casserole

Excellent recipe! I used a large (50 oz) can of CUT green beans and a small (15 oz) can so added a few tablespoons of whole milk and a little more cheese whiz. I left out the mushrooms just b/c family doesn't care for them.... this deserves an easy 5 star rating! Will be adding this to the holiday menu.

Quick and Easy Mexican Chicken

Excellent! The only things I changed were 1) I used garlic powder instead of garlic cloves, and 2) I dredged the chicken in the garlic powder-salt-pepper-cumin minxture in a separate mixing bowl... and I upped the cumin to 1 T. or more. Served this over a bed of "Best Spanish Rice" from this site. A+

Playgroup Granola Bars

Excellent recipe as a base recipe... and as is. The only change I made was omitting the wheat germ because I didn't have any in. I simply increased the amount of oats and flour by about 1/4 c. each. My family gobbled these up in one afternoon... I will be making a double batch tomorrow.
