Chicken and Shrimp Jambalaya

Reviewed: Aug. 15, 2011
The rice wouldn't cook at all and it just tasted like tomato soup. I will never make this again!

Orange Muffins

Reviewed: Mar. 21, 2011
These were pretty good. I made these early one Sunday morning so to cut back on time I omitted the orange zest. Since I was worried about it not having enough orange flavor I used 1/2 c. orange juice concentrate and then filled the measuring cup up to 2/3 c. with water. They turned out perfect that way. I might do half orange juice concentrate and half water next time, just to see the difference. I also put some dried cranberries in half the muffins and that was very tasty. Overall this is a pretty good recipe.

Easy Baking Powder Drop Biscuits

Reviewed: Nov. 4, 2010
Not very good at all. I've made biscuits many times before, but I've never have them turn out so badly. They stuck to the pan and were barely golden on top. Won't try this again.

3-Cheese Pasta Bake

Reviewed: Nov. 1, 2010
I followed the recipe exactly and I didn't care for it. I think I might give it another chance and use cheese soup instead. The cream of mushroom just doesn't taste right to me.

Overnight Coffee Cake

Reviewed: Oct. 25, 2010
Very good! I think instead of walnuts though I'd use pecans the next time. I didn't think it was overly sweet at all. But then again I like super sweet coffee cake. It kept well too. My husband and I continued to eat it for breakfast all week.

Hash Brown Quiche

Reviewed: Oct. 25, 2010
It was ok. I think I didn't let my hasbrowns get browned enough so they were mushy and I didn't really care for that. I think if I try it again I will use thawed hashbrowns and see if that works better. The only change I made was that I used ground turkey sausage instead of ham. I'm not a big ham eater so I didn't want to have to buy it.

Soft Sugar Cookies IV

Reviewed: Oct. 25, 2010
Oh my they are soooo good! I followed the recipe as is. The only thing was I didn't have decorative sugar so I just used plain ol' white sugar. I think this is gonna be my go to sugar cookie from now on.

Chicken Marsala

Reviewed: Sep. 26, 2010
Love it! We serve it over spaghetti and with garlic bread and salad. It's a great meal. The only difference is that we used a whole package of sliced mushrooms not just a cup. Oh and chopped onions and minced garlic. Yum!

Valentino's Pizza Crust

Reviewed: Sep. 26, 2010
The best pizza dough I've made thus far. Similar to Val's crust, but not quite the same.

Snickerdoodle Cake I

Reviewed: Sep. 26, 2010
It's great straight out of the oven. But every day longer that it's leftover it just doesn't taste quite as good. It dries out quite quickly. Since there is only 2 of us in the house makes it hard to make it and eat it before it needs to be thrown out.

Spaghetti Pie II

Reviewed: Sep. 26, 2010
It was pretty good. Not quite like the recipe I remembered from my childhood, but good. Mine was a little runny. I think next time I might use ricotta instead of cottage cheese to help with that.

French Crepes

Reviewed: Sep. 26, 2010
These are great! I just use a little more sugar than it calls for, because I like sweeter crepes.

Roast Beef Sandwich Roll

Reviewed: Sep. 26, 2010
It was pretty good. I'm not sure if I really liked the flavor of the frozen bread dough. So next time I might use my own. I used roasted red peppers from a jar and sauted them with the onions in a little butter instead of microwaving them. Next time I will also be more careful of the roast beef I use. I'm gonna buy better quality next time, not just what's one sale. I used provolone slices instead of cheddar cheese and it worked just fine. Instead of the egg wash I just brushed it with melted butter with some garlic powder in it. Over all I liked it though, I just wanna try it differently next time.

Sweet Corn Muffins

Reviewed: Sep. 26, 2010
We LOVE these! I don't think they are at all too sweet. But I tend to like my corn muffins overly sweet anyways. I made these twice in one week, because we went through them so quickly the first time. Best corn muffins I've made thus far.

Spanish Rice Bake

Reviewed: Sep. 26, 2010
My husband and I loved it. I made pretty much as the recipe calls for. I didn't cook the hamburger in a separate pan. I cooked it all in one and didn't even pour off the grease, it adds flavor. Also I'm not a fan of green peppers so instead a used a can of green chilies. I thought it gave the dish a good flavor. Served it with some fresh cilantro (not just some lots, because we love cilantro in this house!) and sour cream on top. Pair it with a nice salad and it's a great easy meal.

Chicken Pasta II

Reviewed: Sep. 26, 2010
We loved it. I used a can of tomatoes, drained, instead of the fresh ones. It's not really tomato season anymore. Next time I might add two cans because one didn't seem like quite enough. Also make sure to add some salt and pepper. Oh and add minced garlic to the chicken while it's cooking in the bacon grease. In my opinion everything could use a little garlic. Over all though very simple and very good.

Jam Filled Butter Cookies

Reviewed: Jul. 20, 2010
I've made this with both butter and with margarine. I actually like the margarine version better. For one thing with margarine the dough comes together easier. You do have to let it sit in the fridge for awhile when using margarine, but I didn't find that to be a big deal. Also use a really good preserve. I used blueberry the first time and they were to die for!

To Die For Blueberry Muffins

Reviewed: May 10, 2010
Made these on Sunday morning for my husband and we both loved them! I used frozen blueberries and it worked fine. I also made a dozen regular muffins and baked them at 375 for about 20-25 min. I didn't use all the topping. Just about a heaping tablespoon on each muffin and it was plenty. They are great the next day too!

Chocolate Chip Dream Bars

Reviewed: May 7, 2010
Followed what other's said to make in a smaller pan. Never baked all the way. It was so liquidly still that we couldn't bring ourselves to really eat it. I won't be trying this again.
