Coconut Macaroon Brownies

Yum! These were good. I used sweetened coconut, as I could not find unsweetened, and omitted the walnuts because we don't like them. Like some others have said, I would have preferred more fudgy brownies, but these were tasty nevertheless.

Honey Vanilla Ice Cream

Fabulous! I can't say enough about how good this is--incredible creamy and rich. Most homemade ice cream is incredibly hard to scoop after you put it in your freezer, but this is comparable in density to commercially available ice creams.

Curried Coconut Chicken

We really liked this. I was a little leery of that much curry powder, since we are not spicy food people, but it was fine. There is no such thing as tomatoes that are both stewed and diced, at least not at any store I've ever shopped at, but I used stewed and broke them up with a spoon to make them more bite-sized. I might just use petite diced tomatoes next time. I also used light coconut milk; it seemed to have no effect on the final outcome. My only complaint is that it was a little soupy after 40 minutes of simmering. This recipe is a keeper.

Ham and Noodle Casserole

This was fine for using up leftovers, but I don't think I would make it again. As a previous reviewer stated, the onions came out crunchy, so I would recommend sauteing them in butter or oil before mixing them into the rest of the ingredients.

Pesto Sauce

I found this to be way too salty for my taste. I used the grated Parmesan in the green jar (Kraft?), so maybe if I had used shredded Parmesan it would have been better. If I made this again, I definitely would not add any salt.

Sweet and Sour Turkey Patties

These were excellent. As someone else suggested, I cut the oil in half. Next time I make them, I will eliminate it entirely, because it's just not necessary. Personally, we are not big mustard fans at our house, but I used it anyway. I will be eliminating that as well next time. All in all, a nice, healthier alternative to a beef meatloaf.

Baked Soy Lemon Chops

These had a very nice flavor. I did not have the saltiness problem others had, probably because I always use the low-sodium soy sauce. I look forward to having these leftovers for lunch today.

Apple Pork Chops

MMM! These were good! Very juicy and tasty. The apples were a bit mushy, but still tasted good. I might cut the water down, though, as it seemed to be too much. I made the recipe just as written (important to do if you're going to review it!) and definitely would make them again.

Gooey Marshmallow Chocolate Chip Cinnamon Cookies

Good concept, strange execution. I was a little thrown by the low oven temperature and extra-long baking time. I couldn't give it any more stars than I did because the orange extract gives it a strange flavor. Maybe it would work better with vanilla extract.

Cheesy Catfish

We weren't big fans. The flour was a little overwhelming and didn't all soak in, and there was a little too much pepper. Maybe fresh catfish would have helped (in the landlocked Midwest, you have to take what seafood you can get), but I won't be making this again.

Gourmet Chicken Pizza

I really enjoyed this pizza and probably would have given it 4 stars, but my husband did not like it. He said it was too "saucy" and proceeded to accidentally on purpose leave the leftovers on the kitchen counter overnight. I think subconsciously he wanted to make sure I didn't make him eat the leftovers.

Lena's Pasta Fazul

This was just OK. I made it exactly as written and found it to be a nice filling meal, but nothing overly impressive. I think a pound of pasta is a bit too much; I used one of those enriched-with-Omega-3s-and-calcium types that only gives you 14.5 oz. in the box and it made way too much.

Tantalizingly Tangy Meatloaf

I had to substitute orange marmalade for the pineapple preserves, since my grocery store didn't have the pineapple, but I assume the sweetness was fairly comparable. It was too sweet for us, although perfectly serviceable as meatloaf. I just don't think I would make it again.

These were good, but I thought they were a little too sweet for my taste. As a previous reviewer said, it made too much of the caramel sauce. I think the recipe probably should call for a full bag of marshmallows.

Greek Lasagna

Like other reviewers have said, I found this recipe to be on the bland side. Also, it makes an insane amount of pasta. I found I needed one 13X9 pan and two 8-inch square pans to contain it all. The recipe really should specify the size of the pan.
