Strawberry Jam

Whatever you do, follow the instructions and mash the berries. In my first batch, I pureed them and ended up with a very dense, sweet, not so tasty concoction. The second batch was perfect (I learned my lesson) and tasted GREAT! I loved the fresh berry taste, unlike the "stale" taste jams get sometimes. I love it and will use this recipe again next year.

West Tennessee Corn Bread

My husband used to come home with corn bread recipes from co-workers. Now he gets requests from co-workers for this recipe. We generally make this with chili on the bottom of the pan. And always add the creamed corn. It's a wonderful addition to our meal rotation.

Easy Potato Sausage Soup

My husband and I loved this recipe! So much so that my husband stopped by the store on his way home from work the next day to pick up some more potatoes and requested it again the next night! A relatively quick and easy homemade meal. Also freezes great!

Beef Cabbage Hash

Delicious! Especially with the added Worcestershire sauce. I added some chard I had from the garden, and it made making greens easy. But I would eat it just as it is, too.

Colleen's Slow Cooker Jambalaya

This is the best Jambalaya recipe I have found so far! I love it. I've grown quite addicted to jambalaya since I moved to Louisiana. My only concern was that it was too runny, possibly because I chopped the vegies in the food processor. So I just added the uncooked rice to the crockpot and finished cooking it that way. It was SO good! I froze at least half of this recipe because it made too much for one sitting. Next time, I will probably add the rice to half of it because the rice got mushy in the freezer, but everything else was perfect after re-heating it.
