Make Ahead French Toast

Made this recipe for Christmas morning and most everyone really liked it. I was looking for a traditional type French Toast recipe. After reading through reviews, I made the recipe as follows. I rubbed the pan with cold butter to prevent sticking. I used most of two 3/4 lb French loaves. I used so much b/c I tried different widths and slanted vs straight cut. Doing it again, I could get by with one loaf. I decided on 1 1/2 inch thick, slanted cuts, and filled up my 9x13 pan. Two inches was taller than the side of my pan and just didn't look like French toast. The French bread itself was very narrow. Next time, I may try a "fatter" bread. I mixed together 3 beaten eggs, 3/4 c. milk and 1/2 c half and half and poured this over the bread to soak overnight (and it soaked it all up). To save time the next morning, I went ahead and mixed together 5 T butter, melted, 1/4 c light brown sugar, and 1/2 T maple syrup. The next morning I reheated this mixture then poured over the French toast before baking. It did not completely cover all the breads, so next time I'll make about 1/4 more. I loosened the bread with a spatula to prevent sticking. I baked it probably a little more than 40 minutes, but in the rush of Christmas morning I can't be sure of the timing. Sorry! I served it with heated real Maple syrup in dipping cups. This was very good and I'll definitely make it again.

Raspberry Pie III

Absolutely Awesome!!! We loved it. I added more sugar b/c my berries weren't very sweet. The pie was a little soupy when it cooled, but firmed up after we placed it in the fridge overnight. Will definitely make this again. And again....

Artichoke Chicken

This Artichoke Chicken dish was unbelievable! I doubled it and served it to guests last night. It was a big hit. I could not wait to eat the leftovers today. I followed previous reviewers' advice about not using just mayo. I used 1/2 Dukes light mayo and 1/2 low fat sour cream. I also flattened the chicken breasts just a little bit b/c they were real thick at one end. Also, I really squeezed out the artichoke juice as suggested. I had to cook the dish longer than 30 minutes to get the chicken done (checking with a thermometer), probably 40 minutes. It may have been because I had two pans in the oven. Awesome recipe! Thanks for sharing. I'm emailing this link to friends right now.

Slow Cooker Buffalo Chicken Sandwiches

Slider-Style Mini Burgers

Yum! I halved the recipe quite easily. The bottom still got a little hard, but not bad, even using just foil and without the pan as per additional instructions. Will make again. Thanks for sharing.

Pear Sour Cream Pie

The flavor was good, but it was crunchy. My husband loved it anyway. I precooked the pears but not enough b/c they were still quite hard. It's my photo of the slice on the yellow and green plate. Next time I will precook the pears much longer.

Roasted Rack of Lamb

Absolutely the best! I just made this over the holidays and it got rave reviews. I will be making them again. I did half the salt to the crumb mix as suggested, and used a cast iron skillet. I did have to turn down the oven temp b/c the topping was getting black. I used a meat thermometer and cooked until 165 degrees b/c we wanted it cooked. Fantastic! Served with mint jelly on the side for those that wanted it.

Chocolate Eclair Dessert

A friend gave me this recipe six years ago and I've been making it since then to rave reviews. BUT, my recipe uses only one small package of vanilla pudding, 1 1/2 c. milk, and 2 C. cool whip. Add 1-2 T of milk to soften icing. Use the same amount of graham crackers and frosting. Be sure to make the day before. The version I have has thinner layers. Yummy!

Pork Chops with Raspberry Sauce

Absolutely wonderful! Easy to prepare and tasted like a fancy restaurant dish. I subbed Red Wine vinegar in place of the white and it worked fine. I will definitely make this again. And again.

Monte Cristo Sandwich

Nobody liked it. The bread was soggy and the meats and cheese were still cold. I followed the recipe, but after reading reviews maybe I should have cooked it slower. I will not make this again.
