Caramels

Reviewed: Dec. 15, 2010
Do not wrap while even the slightest bit warm or they will stick to the wax paper. Let cool overnight. If anything, undercook these. My thermometer was off and these came out rock hard. I am at high altitude and about 30 minutes of boiling was a good amount of time for my second try. At this point they were set but still easy to chew. Use the cold water test and take off the burner when the caramel is soft, moldable, and makes a ball.

Double spices and add a little more sugar to compensate. Come out chewy and delicious.

Ham and Cheese Bowties

Reviewed: Dec. 7, 2010
If you don't already have ham- just go to the deli and ask for one to two slices of the thickest cut they can do. Julienne it and its ready to go. Used a mixture of Cheddar/Jack and Mozzarella in the sauce. Added some bread crumbs to the top. Pretty yummy.

Coconut Cream Pie I

Reviewed: Nov. 28, 2010
If using coconut pudding, omit added coconut. Sprinkle toasted coconut on top only lightly.

Double Chocolate Pie

Reviewed: Nov. 28, 2010
Grainy, and way too sweet. Omit semisweet choco chips maybe? I think Baker's unsweetened chocolate makes it grainy.

Graham Streusel Coffee Cake

Reviewed: Feb. 25, 2008
I made this for a family brunch and everyone LOVED it. I also ommitted the nuts since I didn't have any on hand, and used a spice cake since that was all I had. I also changed the glaze because I don't like the plain sugar/water combo. I used 3/4 cup confectioners' sugar, 1 tablespoon cream cheese, 1/2 teaspoon vanilla extract, and 1 tbsp water. I put it in a sandwich bag and piped it over the top. I loved the glaze, it really completed the cake! I would like to try this again someday with a yellow cake mix as called for, and see which i like better. YUM! thanks for the recipe

Caramel Popcorn Balls

Reviewed: Nov. 28, 2006
These were sooo good. My husband had a hankering for popcorn balls so we made these last week. I didn't have a candy thermometer on hand so I just guessed when the caramel was done. Maybe I just got lucky but it was perfect- made chewy popcorn balls just the way we like them. The caramel in this recipe is so good! I wanted to eat the whole pot without adding popcorn! We popped 1 cup of kernals and it made the perfect amount of popcorn for the caramel mixture. Baggies on hands was also a great idea for forming the balls. These are very sweet- you'll only need one!

Coconut Cream Pie IV

Reviewed: Nov. 27, 2006
This was runny even when I cooked it for 5 minutes longer and added an extra tbsp of cornstarch. i did NOT like this pie. it was way WAY too sweet. However, my family does not like meringue so i topped it with whipped topping instead. That may have been the problem. Do not make this pie with whipped topping.

i did not like the flavor on this and i am a chocolate fanatic. also the cocoa powder makes it grainy instead of smooth like a cream pie should be. i would not make this again
