Breaded Chicken Fingers

I totally agree that these should be double-dipped in the breading. I also used skim milk + 1T of lemon juice instead of buttermilk. Fantastic!

Chicken Flautas

Very tasty. I followed the advice of another cook and roasted the chicken with some picante sauce, 8 minutes per side. I then shredded it and tossed it with picante, cumin, and onion. I used pre-shredded taco cheese. Delicious.

Asparagus, Chicken, and Pecan Pasta

I sautéed the chicken separately in olive oil and garlic and then tossed it in. I followed the rest of the steps exactly and it was delicious. Next time, I'll increase the red pepper, because we really like it.

Turkey and Quinoa Meatloaf

My husband looked so disappointed when I told him we were having meatloaf, but we put aside our usual dislike and tried this; it was delicious. I added 1T BBQ sauce to both the meat mix and the glaze. It was also incredibly helpful to read that this shouldn't be put into a loaf pan, but free formed on a baking sheet.

Skillet Ham, Cabbage and Potatoes

I sauteed the onion and ham together, added the cabbage (which I bought pre-shredded) and 1/2 cup chicken broth and let simmer. Before adding diced potatoes, I added garlic powder, celery salt, a pinch of cumin and some dried oregano. I also added freshly ground pepper. I simmered all for about 20 minutes and it was so delicious.

Fudge Brownies I

Went with one baker's recommendation on these: use only 2 eggs and bake in a 9x9 pan. Amazing. Also, if you don't have squares of unsweetened chocolate, you can substitute 12 T of unsweetened cocoa and 4 additional T of butter. Tastes just as amazing.

Kielbasa with Brussels Sprouts in Mustard Cream Sauce

Butter Beef

I'm sure the recipe would have been good as written, but in an effort to add some vegetables, I did follow some of the recommendations to add onion and mushrooms (and a little red wine 'cause what doesn't taste better with a little red wine) and this was delicious.

Butternut and Acorn Squash Soup

We made this with both butternut and acorn and with some mystery squashes from our winter farm share and it's delicious. I used 1T of butter and almost all of an 8 oz. pkg of cream cheese but otherwise I followed the recipe and it's delicious.

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

My only change was to use half and half. Can do this with haddock or flounder. I serve with roasted asparagus and corn on the cob. So tasty!

Pinwheel Italian Calzones

I agree that doubling the dough is necessary. Also, I sliced 1/2 of them into the "pinwheels" and then didn't slice the other half. The pinwheels leaked out a lot of the filling, whereas the uncut ones didn't. Delicious both ways.

Thai Curry Tofu

My husband and I aren't big tofu eaters, but this recipe is really good. The sauce could definitely work over chicken or pork, too. I served it with scallion pineapple rice.

Penne con Sauccia

I used all-natural breakfast sausages, 2 7oz. boxes, 1 can petite diced tomatoes, 1 28 oz. can of crushed tomatoes and 3 tablespoons of the Italian dressing mix of herbs that I make from this site. I also substituted chopped, fresh zucchini instead of canned mushrooms. So, though it wasn't quite the same recipe, it was so easy to adapt and it was so tasty, that it gets 4 stars.
