Cheesy Stuffed Shells

Reviewed: Apr. 11, 2007
This recipe was a big hit. I doubled it as sausage always comes in 1 lb packages. I used a basil italian sausage. I used 3 eggs instead of 2, chopped the spinach really fine and also added 1 cup mozzarella cheese to the filling. I found that I only needed one box of shells, even for double the filling - maybe I filled the shells too full. It made 31 shells full which I divided into 4 pans. Ate one that night, froze the other and gave 2 to my friend who just had a baby. Will be making this again for sure.

Chicken Cordon Bleu Casserole

Reviewed: Apr. 28, 2007
I did like this recipe but found it a little salty. Next time I might use fat free Cream of Chicken or reduced sodium Cream of chicken if they have it. I used 2 cans of soup and 1 cup of milk as others suggested. Also, I didn't want to deep fry the chicken, baked the pieces in a 400F oven for 15 minutes. It might not have been as crunchy, but I still thought it tasted really good. Will make it again. Served it with baked baby potatoes, my husband and my 1 year old loved it.

Man Pleasin' Jambalaya

Reviewed: Apr. 28, 2007
I found this recipe a little bland. Also, the rice seemed to be a little mushy. I am not sure if it is me of my equipment - probably me, that everytime I try to make a rice dish it just doesn't turn out. I love Jambalaya but can never seem to make it at home succesfully.

I thought this recipe was excellent. It had a little sweetness to it, was great served with baked salmon and fresh asparagus.

Grilled Salmon I

Reviewed: Dec. 26, 2007
This was very good, did it in the oven - next time would do it on the BBQ. Also, I used a large piece of salmon, next time would cut it into smaller pieces so it would cook evenly.

After-Thanksgiving Turkey Soup

Reviewed: Jan. 26, 2008
Wonderful recipe. I didn't make my own broth from scratch, I just used chicken broth and it tasted wonderful. Made a lot of soup and froze some for later. Thanks for a great recipe.

Orange Pork

Reviewed: Apr. 4, 2008
I liked this recipe. I made 4 pork chops and found that the sauce was enough to cover the pork chops, but I can see if people wanted more sauce for their rice that this recipe wasn't enough. I served it with rice and steam pea pods. I might season the pork next time with a little garlic, salt and pepper before cooking. Otherwise a quick and simple recipe. Had I used instant rice I could have had dinner on the table in 15 minutes.

Salsa Chicken

Reviewed: Apr. 30, 2008
This was good, however I may not use the whole amount of taco seasoning next time I make it. I used the Taco Seasoning I recipe. The salsa I used was chunky, I might puree it a little or I might use a salsa that isn't as chunky.

Colleen's Potato Crescent Rolls

Reviewed: Jul. 18, 2008
I made these for a play date with some other moms and their kids. I made them without the eggs as one child is allergic and used butter flavoured shortening. I only made 1/2 a recipe and rolled 1/2 of the dough around hot dogs for pigs in a blanket and 1/2 just as regular crescents. They were really good, I would definately make these again.

Clone of a Cinnabon

Excellent recipe. I didn't include the eggs and used butter instead of margarine in the dough. I iced with just a simple mixture of icing sugar, water, vanilla and corn syrup. My husband take 2 to work with him everyday.

Teriyaki Kabobs

Reviewed: Sep. 18, 2008
I used 1 tsp grated ginger rather ground ginger and added 1 tsp mirin. I found this rather salty and would not add the seasoned salt next time. I might even use reduced sodium soy sauce as well. Otherwise, I did think this was good and will make it again.

I would agree with others, this was okay but it had a strong ketchup flavor to it. I will say it was very easy to make.
