Mongolian Beef and Spring Onions

Reviewed: Mar. 31, 2012
I thought this was very good. A few simple changes, I fried the beef in 3 batches, in only 2 tbsp of oil each time. I might cut the sauce in half, as there was quite a bit of sauce. I also added mushrooms which went well with the sauce? Served with brown rice and steamed sugar snap peas.

Honey Baked Chicken II

Reviewed: Mar. 6, 2012
I cut the butter to 1/4 cup and used 2 tsp madras curry paste. I also used 10 skinless chicken thighs. I baked it at 40 minutes at 300F on convection, basting often. It was excellent, I may use even less butter next time.

Asian Grilled Chicken

I thought this was excellent. I used bone-in, skinless chicken thighs. I baked them in the oven at 350 F for 45 minutes. Great flavor and cannot wait to try these on the grill once the snow is gone.

Fresh Blueberry Pie w/Graham Cracker Crust

Reviewed: Jul. 9, 2011
As other reviewers suggested, I used 3/4 cup water and 1/4 cup lemon juice. Then added the zest of 1 lemon when I added the 3 cups blueberries. This was excellent with fresh whipped cream. I didn't think it was too sweet. I made it a second time with a graham cracker crust - out standing, will definately do this one again.

Honey Chicken Stir-Fry

Probably didn't need the cornstarch, but this was really tasty and really easy. It took the same amount of time as the rice took to cook.

Extreme Chocolate Cake

I used Pam on my cake pans and the cake stuck. So I would recommend to grease and flour instead. Otherwise an excellent cake, icing is sweet but very good.

Doubled the marinade and did it on 8 whole boneless, skinless chicken breasts. Let them marinade for 2.5 hours, then bbq. Fantastic - will definately do this one again.

Roasted Garlic Cauliflower

Reviewed: Jul. 3, 2010
I did this on the bbq. Just put cauliflower, oil and garlic all mixed into a foil packet. BBQ about 10 minutes on one side, flip and cook 10 minutes more. Open packet and sprinkle with parmesan, salt, pepper and parsley. Close packet for 5 minutes to let cheese melt. Excellent, it smells as good as it tastes. This is the best way to have cauliflower.

Cheddar Biscuits

Reviewed: Jan. 12, 2010
I used butter instead of margarine and didn't sprinkle the extra garlic salt over top as I didn't think my kids would like the extra garlic. I used colby cheese instead of cheddar as that was all I had on hand. The biscuits were fantastic and easy, great with a big bowl of soup.

Very good recipe. I cooked on convection, 225 for 3 1/2 hours. It very tender and juicy chicken. I also used a smoked paprika, gave a wonderful smoked flavour to the chicken.

Beef Barley Vegetable Soup

Reviewed: Jan. 12, 2010
I thought soup was excellent. Two suggestions: when adding the barley to the crockpot, add some hot broth, at least a cup - that way the barley doesn't soak up the fat from the roast. I let the barley mixture sit in the fridge overnight and was able to take all of the fat off the top once it solidified. I would also use diced tomatoes, just because my husband doesn't like whole tomatoes, and also I needed to add more water and bouillion, otherwise it would have been porridge like. Fantastic recipe, will make again for sure. I used pearl barley, but my uncle told me I should have used pot barley, anyone else have a recommendation? The recipe makes a lot, I have 3 containers that I have frozen for quick meals at a later date.

Sweet, Sticky and Spicy Chicken

Reviewed: Nov. 24, 2009
I thought this was pretty good and really easy. I cut down the on hot sauce, only using 1 tsp as my kids don't like really spicy food. It almost needed some vegetables, I think next time I might add some red peppers and water chestnuts.
