Mini Pumpkin Butterscotch Muffins

These are wonderful! I only had pumpkin pie filling, so I cut back on both sugars by half & I used 1/8 tsp salt. (Since it already has sugar, spices, & salt in it.I did add the cinnamon still.) I can't wait to make them again!

Spicy Tortilla Roll-Ups

These are great! I ended up using 1 & a half blocks of cream cheese, no pimentos, 2 tbsp of cilantro, & only 1 tbsp of hot sauce. (I left the other ingredients the same.) I was able to make 7 large tortillas. Next time, I will use more hot sauce, and two blocks of cream cheese. I also spread a small amount of filling I had leftover on a slice of french bread & toasted it in the oven for a few minutes for my lunch. Yummy!

Mexican Chicken Corn Chowder

I love this recipe!! I have made it a lot this winter. I do have a few changes. I tried this first with half and half as the recipe calls for, but now I use fat free half and half. I can't taste the difference. I also put 3 frozen chicken breasts in a crockpot with about a cup of water & cook on low for 4 hours. I then shred & add to the recipe. I also add an extra can of creamed corn, & substitute a can of rotel for the tomato & green chilis. Thank you for sharing this recipe!

Pumpkin Spice Cookie

This recipe did not work for me. I guess I made mine too big, but it took a lot longer to cook. (I used a tablespoon full) My 1st batch I took out at 12 minutes, because I was worried they would be overdone. Bad idea. They were not cooked in the middle. The next batch I made a little smaller, and cooked for 15 minutes. They were done, and my kids did like them so that was good. Just be warned...do the toothpick test on them before you take them out of the oven. Also, don't expect them to flatten out while baking. Whatever they look like when you spoon them out, that is what they will look like when they are done. They don't look appetizing!

Meat Loaf Pie

I have made this a few times. We enjoy it, and it I like it because it is easy. The first time I made it, I followed the recipe. The second time I made it, I forgot the egg, and couldn't tell the difference. So now I leave it out. I do add a little more ketchup & worcestershire than called for. I also use frozen corn, and the last couple of times I have added a drained can of green beans.

Baked Ziti III

This was excellent! I only made a couple of changes per other reviews. I added a can of drained Italian style diced tomatoes to the sauce mixture & left out the basil. I only used about a cup of sour cream. I mixed half a cup with the pasta on the bottom of the dish, along with a couple of spoonfuls of sauce. (I made it the night before so I didn't want it to be dry.) I used one can of Prego sausage flavored sauce & one can of Prego meat flavored sauce.

Best Ever Blueberry Cobbler

This is great! The only changes I made were to use a 1 lb bag of frozen blueberries (thawed for 30 minutes) & add a tablespoon of cornstarch to the orange juice before mixing with the berries. I served it warm with vanilla ice cream. I have also made it with only strawberries, and it was great too!

Sweet Onion BBQ Burgers

These were very good! I did not have onion salt, so I just used 1 teaspoon salt instead. The onion topping was great. I ended up cooking my onions for about 30 minutes, because I was waiting on my oven fries. The fries were good dipped in the topping too!

Blue Cheese Chicken Wing Dip

Cinnamon Coffee Cake II

This cake was pretty good. I followed it exactly, except for using a french vanilla cake mix & pecans instead of walnuts. I used a glass pan, cooked the minimum time, & the edges are overdone, so watch closely. It could be my oven, though.

Black Bean and Corn Quesadillas

This recipe okay. It was too sweet. I followed it exactly, except for adding some minced garlic to the onions. I don't think that was a good idea because of the sweetness of the corn & sugar. If I make them again, I will not add the garlic, and I will not add the sugar.

Chocolate Torte

This is wonderful! I made it for my mom's birthday, and everyone loved it. I did make a couple of changes. I am not a fan of dark chocolate, so I used a Devil's Food cake mix. I also doubled the filling.(I ended up using most of it)On each layer I sprinkled Heath toffee bits. I would also recommend purchasing a Wilton cake slicer. It is inexpensive, and a huge help in making the layers perfect! ...Also, I was only able to refrigerate for three hours.

This is great!I followed the recipe exactly the first time, & the next time I used reduced fat cream cheese. They tasted the same, but the one with reduced fat did not "set up" as well. Thank you for the wonderful recipe!

Delicious Chicken Casserole

This was very good! I listened to the other reviewers and doubled the amount of rice.(I used brown rice) I also used 1 can of cream of chicken & 1 can of cream of mushroom & added 1 cup of fresh broccoli to it. I also sprinkled some cheddar cheese on top before I added the cracker mixture. I know I added alot, but I still think it would be very good without the changes.

Armadillo Eggs

I would rate this 5 stars with the modifications I made to make it easier. I use half the amount of cheddar cheese, & half of a block of cream cheese cut into 24 small cubes. Then I use canned jalapeno slices. I mix the sausage mixture, roll into a ball, flatten out, put a jalapeno slice & a cube of cream cheese, and fold the sausage mixture over and seal the edges. They are wonderful!
