Delicious Ham and Potato Soup

WOW!! I've been using a different recipe for potato soup for years and decided to try a new one ..... GLAD I DID!! This was exceptional. I made it without changes ...... and don't expect to make any changes going forward. I used smoked ham and it was really tasty.

Slow Cooker Beef Stew I

I broke one of my big rules ..... I "enhanced' this recipe based on a number of reviews before making it...... but, in my defense .... every change made sense ...... including: swapping reg. salt for seasoned; increasing flour to 1/3 C & putting the seasoned flour in a bag with the meat to coat then sautéing the beef in EVOO until browned. I added the onion then put it in the slow cooker. Next I mixed the beef broth with the worchestershire sauce & 1/2 C red wine to deglaze the browning pan. added that to the beef and ran it on "high" for 2 hours. Then I cut up and added the potatoes & onions, added 2 cloves of garlic, 2 bay leaves, the remaining ingredients, a packet of McCormicks Beef Stew Seasoning, a C of water and dropped the temp to "low" for the next 4 hours ..... oh and the paprika I used was Hot Hungarian. It was AWESOME. A slight "bite in the back of the throat, TENDER TENDER beef, thick gravy, tender veggies, and a great meal. I served it with crusty French bread ........... a REALLY good meal .... TRY IT!!! UPDATE: It's even better the next day!!!

Bella's Brussels Sprouts with Bacon

I was looking for a new Brussel sprouts recipe for a holiday dinner party and this one got great reviews and sounded good. In general I liked it but I doubt I will make it again. I used aged Balsamic vinegar and followed the recipe exactly. It was quite thin, sauce-wise, and really didn't have a great deal of "wow". The fact that there were leftovers was the proof.

Carib Black Bean Soup

Really good recipe. I followed this exactly except for the 2 cups of water .... I thought I would add water if needed. when the soup was "done" I felt it needed a bit more kick so I added more cumin and a sprinkle of cayenne. It was much better (for my taste) then I added a half pound of leftover Christmas dinner smoked ham. I loved it!!! But the original recipe was followed and I rated it based on that tasting before adding anything else.

The Best Spinach Salad

I followed this recipe EXACTLY as written. I made the dressing an hour or so in advance to let the flavors meld ........ before serving I tasted the dressing ......... not to my liking ..... too much flavor from the ketchup. I quickly made up a traditional vinaigrette ...... salad was good!

Easy Garlic Escargots

A really nice alternative to traditional escargot. I prepare escargot at least once a month and typically as part of our entrée. Adding the mushrooms really adds volume and it was just a bit too much, for us. The flavor and presentation is really good. I think if I prepare it again I will serve it as an appetizer planning 3 per person. My only "adds" were a light dusting of bread crumbs before baking ...... and I broiled the last 3 minutes of the bake time.

Slow-Cooker Barbecue Ribs

REALLY good recipe -- a KEEPER!! My wife has never liked ribs - or at least has never praised mine! I've got numerous recipes and a REALLY nice smoker but they never got an "attaboy". This recipe WORKED! I read numerous reviews and used the beer instead of water, cooked on high for 4 hours, and used the 20 min / 350F oven + 7 min on broil cook. They were beautiful, tender, and tasty. Got that "attaboy" I needed!!!

Crawfish Linguine

REALLY TASTY!! I broke one of rules and modified the original before making it the first time - BUT, to my defense, this was very similar to a recipe I had years ago but lost. I was glad to find this one to use as a starting point. I added 1 TBSP Cajun seasoning, reduced the butter by half, and added a bit of corn starch to thicken the sauce. Next time I will wait until the sauce begins to thicken before adding the crawfish so they don't cook down as much. Overall a really tasty meal.

Asian Style Country Ribs

I had a package of Country Style Ribs that I needed to use .... I did a search and liked this recipe. Since my package was smaller I halved the recipe for the sauce and elected to use it for use in a slow cooker instead of marinating it. I put the ribs in, covered them with the sauce, added a bit of ground pepper and cooked them on low for about 7 hours. An hour before serving I put a can of rinsed/drained black beans in. I would recommend this slight variation highly. I seldom rate a revised recipe but the sauce is the real winner here .... oh, and if you like spicy - double the Asian spicy garlic sauce.

Artichoke Chicken

Sorry for the mediocre rating but I found this recipe really bland ..... and I thought it read like an absolute winner for me. I followed the recommendation for splitting the mayo with sour cream as I thought the full mayo would be oily and a bit sweet. The cooking time really didn't fully cook the chicken cut as described so I had to cook it a bit longer. I may try it again with several changes to put a bit of "pop" to it.

Sue's Taco Salad

REALLY good recipe. I fixed it EXACTLY as written, my typical process. I would not change anything, NOT typical of me !!! This had a really nice balance of flavors, colors, and texture. OK .... I added just a sprinkle of crushed red pepper to the ranch dressing for a bit more kick. THANKS SUE!!

Country-Style Steak

After reading a dozen reviews I HAD to make it. it was even one of the "daily recipes". As usual, for me, I made it exactly per the recipe. I'm not sure I get it ..... really mediocre.... just OK. The "gravy" never really thickened up with the casserole dish covered in aluminum foil. My wife said it was typical of meals she had growing up in Ohio. In brief ....... I won't be making this again with so many better recipes out there. I can't recommend this recipe.

Key West Chicken

OUTSTANDING!!! I've now made this twice - first; as-written ... second time with VERY minor additions to suit my tastes. In place of the garlic I used a tablespoon of Vietnamese Chili-Garlic sauce so it would have a bit of a kick. Came out great ... but the original recipe is wonderful all by itself. TRY IT on chicken or shrimp kabobs!!!

The Best Stuffed Mushrooms

As usual, for me at least, I prepare recipes from this site as-written the first time then decide changes I'll make the next time .. otherwise the review, good or bad, is invalid for the original. This is a really good recipe as is. They came out really good with great flavor and presentation. NEXT TIME I will add a little garlic powder, bread crumbs, and possibly a bit of diced jalapenos. I will also increase the amount of bacon as I really like the combination of bacon and jalapenos.

Speedy Homemade Salsa

REALLY GOOD!!! I followed the recipe EXACTLY for the first batch. My next batch will double the cilantro and the garlic and will add 1 TBSP of fresh lime juice. I used tomatoes from my garden. After washing them I froze them in a ziplock bag. When I was ready to make the salsa I ran each under hot water and the skin came right off!!! Neat tip!!!

It was REALLY tasty but the recipe, as written, does not produce anywhere near enough sauce. I would suggest triple all ingredients if you want to stay with the recipe as written.

Ceviche

I've made this a dozen times --- mostly as written, here ... but I've incorporated a few "tweeks" that suit my tastes: I always make the entire dish a day before I want to serve it ---- makes a HUGE difference..... generally the scallops go into the lime juice first thing in the day and everything else gets added late in the day to be served the following day AND I add most of a medium jalapeno with some of the seeds. A sprinkling of chopped cilantro and chunks of avocado on top make a great presentation and dish.

Spicy Lime Grilled Shrimp

For me this was a great marinade. After reading a dozen or so reviews I reduced the cajun spice by half (Tony Z's) and added the zest from the juiced lime. I may have let the shrimp set too long as the lime juice began to "cook" the shrimp (ala ceviche) so I wont do that again .... but now that I have the marinade recipe I plan to use it for other thinks like flank steak and chicken!!! THANK YOU!!!

Baked Ziti III

TRY THIS RECIPE!!! Followed it EXACTLY the first time: comments- MAKES TOO MUCH unless you are the Brady Bunch. Second time: used 1 1/2 jars Mezzeratta Arrabbiatta Spaghetti sauce (unbelievable), tossed cooked Ziti (12 oz) with 1 cup sour cream to keep it creamy, added 2 cloves of minced garlic, and only used shredded Mozzarela cheese. OUTSTANDING RECIPE
