Kung Pao Chicken

It was REALLY tasty but the recipe, as written, does not produce anywhere near enough sauce. I would suggest triple all ingredients if you want to stay with the recipe as written.

Ceviche

I've made this a dozen times --- mostly as written, here ... but I've incorporated a few "tweeks" that suit my tastes: I always make the entire dish a day before I want to serve it ---- makes a HUGE difference..... generally the scallops go into the lime juice first thing in the day and everything else gets added late in the day to be served the following day AND I add most of a medium jalapeno with some of the seeds. A sprinkling of chopped cilantro and chunks of avocado on top make a great presentation and dish.

Spicy Lime Grilled Shrimp

For me this was a great marinade. After reading a dozen or so reviews I reduced the cajun spice by half (Tony Z's) and added the zest from the juiced lime. I may have let the shrimp set too long as the lime juice began to "cook" the shrimp (ala ceviche) so I wont do that again .... but now that I have the marinade recipe I plan to use it for other thinks like flank steak and chicken!!! THANK YOU!!!

Baked Ziti III

TRY THIS RECIPE!!! Followed it EXACTLY the first time: comments- MAKES TOO MUCH unless you are the Brady Bunch. Second time: used 1 1/2 jars Mezzeratta Arrabbiatta Spaghetti sauce (unbelievable), tossed cooked Ziti (12 oz) with 1 cup sour cream to keep it creamy, added 2 cloves of minced garlic, and only used shredded Mozzarela cheese. OUTSTANDING RECIPE

Best Ever Brisket

Like MANY of the reviewers I've made a BUNCH of briskets over the years and thought mine was the ONLY way to prepare it ..... well ... I now have modified my recipe to incorporate much of this version. I use my own rub and will continue to. Mine is similar but spicier and I start off with 3 hours of mesquite smoke but in a COLD smoker so as not to start the cooking process. Once that's done I follow the COOKING piece of this EXACTLY and it is really a fine end result. Thank you, ChristineD for teaching an old dog a new trick!!!

Grilled Salmon I

I love salmon .... wife, not so much. I have a recipe she likes so I made two versions -- her's and this one (for me). The only thing I added was a small sprinkle of cayenne just before baking. I offered her some of mine .... she tried it ..... and ... verdict was BETTER than her past "acceptable" recipe!!! So ... this recipe works for people who LIKE salmon AND those who do not!!! I followed this recipe exactly, except for the light sprinkling of cayenne and it was really good. I baked mine for 15 minutes at 400 then on broil for 5 minutes. I use a small cast iron pan for all of my baked fish ..... thank you for a new and wonderful recipe!!! CHEERS!!!

King Ranch Chicken Casserole I

I've been using a different version of this for years, but decided to try this one. MUCH better and a bunch easier to prepare. The only thing I would recommend is increasing the cook time or temp as mine wasn't terribly hot. I followed the recipe exactly and added a little cilantro for presentation and for another dimension of flavor. I served it with the Mexican Rice recipe, also from this site. BRAVO!!!

Spicy Bean Salsa

ALWAYS a hit!! I made it exactly per this recipe the first time .... it was very good. The way I prepare it now includes Rotel canned tomatoes undrained, fresh lime juice instead of the italian dressing, chopped cilantro, and 2 TBSP cumin. No garlic salt or green peppers.

Asparagus-Stuffed Chicken Breasts

I really looked forward to preparing this recipe. I read several reviews and since I grow my own asparagus I thought it would work perfectly for a dinner with new friends. It came out good -- just not "great" as other reviewers touted. For me the sauce was just ..... OK. I think I will find another sauce that adds a little more depth and flavor to this really nice presentation. Visually it's a 5-Star meal.

Awesome Slow Cooker Pot Roast

Excellent Recipe!! Next time Notes: Use just one can of C of M'room soup, replace water with a C of Beef Broth, add 8oz sliced m'rooms 1/2 hour prior to serving, and a TBSP of flour to thicken the broth 1/2 hour prior to serving. But recipe just as written was REALLY good.

Chicken Marsala

Not a fan of this recipe. Could have been the brand of Marsala, but had a strange aftertaste - a little sweet, and as written, the sauce is quite thin and bland. If I were to try it again I would try using a drier white wine, a little garlic and would add some half and half for a little body in the sauce ........ but that probably isn't THIS recipe.

Slow Cooker Chicken Taco Soup

A rare 5 Star rating (from me)!!! I followed the recipe exactly - as I typically do the first time. GREAT FLAVOR, color, and consistency. I made it for friends who generally prefer mild spiced food .... this was a little spicy for them but they raved about it!!! I'll stay with the recipe as written. I served it with sour cream, sliced avocados, Fritos, Cilantro, and shredded cheese. It's a VERY good recipe and works great with company. THANK YOU PATTI!!!

Mexican Rice III

A rare (for me) 5 stars. What really made this outstanding was a few preparation tips from one of the reviewers suggesting a 2 for 1 ratio of chicken broth, heated, before adding to the browned long grain rice. I served it last night to a group of friends ... they asked to take the leftovers home!!! So the keys: LONG grain rice, HEATED chicken broth, allow to stand, off heat, for 10 minutes before serving and a SQUEEZE of lime at serving. ENJOY!!!

Oven Fried Chicken IV

Really good coating. The sour cream really is the key. I used a suggestion from one of the reviews to use a cooling rack on top of a cookie sheet which worked really well. I think the chicken breasts I used the first time were just too large to get the coating fully integrated. the next time I will use different pieces, add cayenne to the mixture, and spray a little butter on the coating to help crisp it up.

Salmon with Dill

I thought it was good ..... just not great. I followed the recipe exactly ....... with a shorter cook time to avoid drying out the salmon. I think there are other, better, recipes on this site for quick and delicious salmon..... and serving with tartar sauce is just wrong. UPDATED REVIEW: Tried it again but this time I used several tips from other reviews and it came out really good (not 5 stars, but very good). The changes were: I put fresh lemon juice on it for about 2 hours before cooking. then I put a coating of mayonnaise, followed by a sprinkling of lemon pepper, dill, cayenne, and sea salt. it baked for 20 minutes at 400 and was very moist and tasty. MUCH BETTER this time.

Highest praise ----- One of the VERY best recipes I've found on ALLRECIPES.com in the many years I've been watching it...... W O W!!! I followed the recipe EXACTLY (as I typically do the first time). Wouldn't change a THING!! The one reviewer's "Outback sauce" is incredible; Orange marmalade, ground mustard, horseradish, and salt. MAKE THIS RECIPE!!!

Chunky Potato Soup

VERY good. As I try to always do, I followed the recipe exactly the first time. Next time I will add large sliced fresh mushrooms (8oz) and either cubed ham, chopped crispy bacon, or crispy chopped pancetta ...and it needed a little more ZING for me so I will add hot paprika. But a good foundation.

Easy Mint Chocolate Chip Ice Cream

EXCELLENT RECIPE!!! If you're new to making ice cream you should try this one!!! A few suggestions to consider: 3 drops of green food coloring doesn't provide much color -- but you can add a drop at a time as it mixes. For the "chips" consider freezing a chocolate bar of your favorite brand, put it into a zip lock bag and use your meat hammer to break it into small chunks .... no mess! I used 1 tsp of peppermint and 1/2 tsp of vanilla and it was REALLY good. GOOD RECIPE!!!
