About this Cook
Spent most of my career on airplanes, in hotels, and in way too many meetings. Got the chance to taste foods from around the world. Found that I had a very diverse interest in foods. Married a true "meat & potatoes" girl who had never traveled anywhere and was reluctant to try anything food-wise, plus - she hated cooking. It's worked great for 29 years. Before I would leave on business I would prepare meals she could reheat easily. Each home we've built allowed me to design the kitchen. She's very encouraging about my cooking which prompts me to try more and more new recipes. This web site is really a piece of my cooking world. I visit often, perhaps too often ...... and tend to tell everyone that I meet about it.
My favorite things to cook
I really like almost anything with a little heat and spice. I'm on an continuing quest to find a jar of Umami!!!
My favorite family cooking traditions
My mother was raised in a very modest environment. Her mother was a truly lousy cook. How my mother ever became so skilled in our kitchen I'll never know, but she loved an adventure and often made our family meals memorable with limited resources.
My cooking triumphs
I remember cooking a meal for my girlfriend (now wife) many years ago that she just raved and ranted about to her sisters. One of her sisters was trying to win the heart of a young man, but like my wife, was a really lousy cook ...... more acurately ...... didn't enjoy cooking. So I prepared a meal for her sister to serve as her own doing. Good news --- she won his heart and they married ----- bad news --- he soon learned she couldn't repeat the meal.
My cooking tragedies
Without question ------ preparing sushi at home. From my days traveling I became a huge fan of sushi. Remember; my wife is a conservative eater so sushi is a BIG leap. I wanted her to like it, too. I called my favorite restaurant in Seattle .... got the instructions and list ..... bought the stuff .... prepared it ..... threw it out and ordered pizza. Won't try that again!!!

Delicious Ham and Potato Soup
WOW!! I've been using a different recipe for potato soup for years and decided to try a new one ..... GLAD I DID!! This was exceptional. I made it without changes ...... and don't expect to make any changes going forward. I used smoked ham and it was really tasty.

Slow Cooker Beef Stew I
I broke one of my big rules ..... I "enhanced' this recipe based on a number of reviews before making it...... but, in my defense .... every change made sense ...... including: swapping reg. salt for seasoned; increasing flour to 1/3 C & putting the seasoned flour in a bag with the meat to coat then sautéing the beef in EVOO until browned. I added the onion then put it in the slow cooker. Next I mixed the beef broth with the worchestershire sauce & 1/2 C red wine to deglaze the browning pan. added that to the beef and ran it on "high" for 2 hours. Then I cut up and added the potatoes & onions, added 2 cloves of garlic, 2 bay leaves, the remaining ingredients, a packet of McCormicks Beef Stew Seasoning, a C of water and dropped the temp to "low" for the next 4 hours ..... oh and the paprika I used was Hot Hungarian. It was AWESOME. A slight "bite in the back of the throat, TENDER TENDER beef, thick gravy, tender veggies, and a great meal. I served it with crusty French bread ........... a REALLY good meal .... TRY IT!!! UPDATE: It's even better the next day!!!

Bella's Brussels Sprouts with Bacon
I was looking for a new Brussel sprouts recipe for a holiday dinner party and this one got great reviews and sounded good. In general I liked it but I doubt I will make it again. I used aged Balsamic vinegar and followed the recipe exactly. It was quite thin, sauce-wise, and really didn't have a great deal of "wow". The fact that there were leftovers was the proof.
