Brooke's Best Bombshell Brownies
THE ONLY HINT YOU NEED: Following the recipe exactly = Brooke's Brownie Perfection. Don't over beat or over bake, use good quality chocolate and for the love of all that is holy don't substitute the ingredients or reduce them. If you do, it's *your* recipe (or the reviewer's you chose to trust), not Brooke's, that deserves less than 5 stars. These admonishments aside, this is not a recipe for those that love cake-like brownies. These are gorgeous, rich, chewy and decadent. If that sounds like brownie nirvana to you, then stop here. I don't change a darn thing in this recipe and they turn out perfectly every time. And I make them ALL the time. There is no way this recipe, as written, makes a hard, dry, crumbly brownie. That outcome is on the reviewer or the reviewer's oven temperature. Here are some other helpful hints: I spoon my flour and cocoa when I measure rather than scoop. This does make a difference and I prefer the texture when I measure this way. I start watching them like a hawk at around 28-30 minutes. I like slightly underdone brownies. So, this way, I can catch them when perfect. The time varies slightly with the weather.

Fluffy Pancakes
Here's some helpful hints: First, you'll never buy processed boxes of mix again. Most of us always have these ingredients on hand and so we're just moments away from delicious, homemade pancakes. I seldom have buttermilk and don't always have lemon, so souring the milk with vinegar, which I always have, is a win. Make these exactly as written the first time as a lesson in learning. They are perfect as written. That said, if you prefer just a smudge less sugar, then you can back off a bit on that. Also, as other reviewers said, letting the batter sit up a few minutes adds extra lightness and fluff. The batter as written will result in a better that is very thick. This is a preference issue. We prefer our pancakes a little less thick, so I thin the batter with some extra milk (not much, a tablespoon or so to taste). They come out light, airy and delicious. And no processed crud! Enjoy!

Easy Bacon and Cheese Quiche
My thirteen-year old son made this for dinner tonight. Made it exactly as written except he used real bacon (7 slices crumbled up). Came out perfect and tasted great!! Pie shell went in frozen (sat on the counter 10 minutes during prep). Next time, I would saute the onions a bit to sweeten their flavor and I would add some spinach for color. But this is such an easy, tasty recipe using things we always have on hand. Highly recommend.
