Slow Cooker Lentil and Ham Soup

So yummy! I have tried a few lentil soup recipes from this site, and this one is by far the best!! I didn't have tomato paste, so I omitted the water too and just added about a cup of marinara sauce. My husband who doesn't like soup kept coming back for more!

Cashew Raisin Rice Pilaf

I actually changed quite a bit of this recipe. I sauted the onion and some angel hair pasta, added vegetable broth, raisins, and rice, salt and some saffron. I toasted almonds, because I didn't have cashews or carrots. After the rice was done cooking I added frozen peas and toasted almonds. Yum, yum.

White Chocolate Raspberry Cheesecake

I used Oreos for the crust, 2 cups, 1/4 butter and 1 tbsp sugar. I followed the instructions on baking cheesecake here on Allrecipes, and wrapped the bottom of my pie pan in foil and put in on a cookie sheet with water so it would cook evenly in the oven. Came out perfect!! Will be making it again!

Quick Pasta Carbonara

Baked Oatmeal II

Yummy!! It came out very sweet, one cup of sugar is a lot, so next time I'm going to put in 1/2 cup of brown sugar instead. I added walnuts and a chopped apple. This is a very versatile recipe. I used Almond Milk instead of regular milk too and it came out great!

Ten Minute Enchilada Sauce

A couple revisions, I added fresh garlic and onion at the beginning. I only used 1/8 cup of chili powder because we like it more mild and that was plenty spicy for us. I also added about 2 tbsp of melted dark chocolate. You can't taste it but it gives the sauce a darker color and more depth to the flavor. It turned out fabulous!

I made some adjustments, I doubled the recipe, used 3 cinnamon sticks soaked with the rice water over night. I also double the amount of milk, because I thought it was too watery. But it turned out fabulous!! Loved it! Definitely use cinnamon sticks to soak with rice water over night.

Simple Spinach Lasagna

Best lasagna I've ever had! I used 10 oz of fresh spinach and 10 of frozen broccoli that I cooked with the onion, garlic, and herbs. I also used 2- 26 oz jars of sauce and ricotta cheese instead of cottage cheese. My husband also agreed that it was the best lasagna he's ever had. We will be making this one again soon!

Pat's Baked Beans

A couple things. I didn't have molasses or Worcestershire Sauce, so I used pure maple syrup and soy sauce instead. Soooo flavorful!! Everyone loved them and I got a lot of complements. Also, I cooked the bacon, put everything in the slow cooker for about 8 hours and kept it on warm until we were ready to eat, and it was perfect.

To Die For Blueberry Muffins

Yum, Yum!! I made some substitutions, replaced all-purpose flour with whole wheat pastry flour, vegetable oil with applesauce, milk with soy milk, white sugar for brown sugar. They came out perfect!! I also did not add the sugar topping, but I don't think it needs it. These are scrumptious!!

Mom's Zucchini Bread

Okay, I made a couple revisions. I traded the oil and used applesauce. Only put in 1 cup suger, and 1 cup brown sugar. I made the brown sugar topping, but I didn't think it needed it. I also made one loaf and then 12 muffins. My toddler, who's the pickiest eater in the world, devoured the muffins. I thought the muffins came out better than the bread. My toddler keeps looking around for more muffins, so I better go buy some more zucchini!!

Broccoli Chicken Casserole I

Okay, this made it a 5 star recipe for our family. I put brown rice on the bottom, frozen broccoli (didn't cook it before, and it turned out great only cooking in the oven for 25 min). I cubed chicken and boiled it with salt, garlic salt, and some Italian seasoning - which gave it great flavor, then I mixed it with 2 cans cream of chicken soup, 8 oz sour cream, about 1/2 cup milk, 1 1/4 cup cheddar cheese. I poured the chicken/soup mixture on top of broccoli and rice, crushed up ritz crackers on top and pour some melted butter on top to seal the flavoring. My husband isn't a big casserole fan, but he loved this!

Seven Layer Taco Dip

Best 7-layer dip! Next time I will add some extra beans on the bottom. (I had a pan 8x11 inch and the beans barely spread across the whole bottom.) I did add guacamole instead of lettuce and green peppers. It turned out great!
