Baby Back Ribs

We just had these ribs for dinner. I placed the ribs in a 9x13 pan and lightly seasoned them with no salt spices and poured about 1/2 bottle of BBQ sauce over them. They sat in the refrigerator overnight -- then I followed the rest of the recipe. We finished them off on the grill for 8-10 minutes and they were perfect. Y-U-M-M-Y!! Definitely 5 stars!

Chicken with Artichokes and Sundried Tomatoes

I have been making my own version of this meal for years. The biggest difference is that I use two cans of chicken broth, then cook the pasta with the rest of the ingredients. It is a one-pan meal with little clean-up, you do not need a starchy thickener AND the pasta tastes great. Everyone in my family loves this meal!

Butternut and Acorn Squash Soup

I took the advice of previous reviewers regarding the sweetness, so instead of brown sugar I added about 1 T of honey. I didn't have any cream cheese so used about 1 cup of half and half instead. Used my immersion blender which is so much quicker than a conventional blender. It turned out great and probably not as rich as it would have been with the cream cheese.

Cream Cheese Frosting II

This recipe is PERFECT. I frosted my pumpkin bars with this and took them to work...everyone loved both the bars and frosting. Don't change a thing.

Zucchini Bread IV

I slightly altered the recipe as suggested by others by adding some extra zucchini (about 3/4 cup) and used 1/2 cup of plain yogurt in place of 1/2 cup oil; otherwise I followed the recipe. It was not nearly as good as my old family tried and true recipe. It is not likely that I will use this recipe again.

Fresh Rhubarb Pie

Absolutely excellent pie! Make certain to follow the recipe by placing the sugar over the rhubarb -- do not mix the sugar with the rhubarb. This pie received rave reviews. I will definitely make this again.

Excellent cheesecake and not too difficult to make. I used the best ingredients possible, which made the cheesecake extremely expensive. However, all the raves I received made the price very worthwhile.

Simple Whole Wheat Bread

This past January 1st, I made a pact with myself that I would not buy a single loaf of bread in 2008. So far, I have held to that pact; therefore, I have made many loaves of bread in the past five months. I just used this recipe for the first time and it came in a close 2nd to my grandmother's old fashioned whole wheat bread recipe. I made a few variations -- I substituted 1 T molasses for 1 T of the honey; I pulverized 1 cup whole oats in my food processor and substituted it for one cup of the bread flour; I added sunflower seeds and chopped almonds toward the end of the kneading process to add a little crunch. I just took the bread from the oven and spread it with some butter -- excellent. I will use this as a basic recipe and will make variations as I go along.

Rhubarb Cake I

Love it!! This is an excellent cake, very light and moist -- and very easy to make. I made the batter according to the recipe but instead of the topping I lightly sprinked the top with a cinnamon/sugar mixture, as that is the way I remember eating rhubarb cake as a child. Next time I think I will add cinnamon and nutmeg to the cake batter, as I love cinnamon. I will also try baking it with strawberries.

Orange Cream Fudge

We have many small-town candy/fudge shops in northern Minnesota. My favorite fudge has always been 'orange cream'. This recipe is as close to "Up North" fudge as one could get. This fudge is awesome; smooth, tasty, an delicious. A bonus is that it is easy to make. A definite "keeper" recipe.

German Chocolate Fudge

I now have a new fudge recipe. This is wonderful fudge and is so easy to make. I made it according to directions except I used walnuts instead of the pecans. Try it. You will not be disappointed.
