Easy Chicken Marsala

Wow! Family loved this for dinner the other night. I too doubled the sauce... it tasted fantastic. Served simply with steamed vegies for a low carb meal. thanks!

Crustless Spinach Quiche

Family and I loved this. Needed a little extra spice. We also added some delicious low fat sausages (chopped) to the mix after grilling. Added a great meat element and really made the pie. We made double the pie and ate leftovers all week. (Also used leeks rather than onions - yummo!)

Chicken Chimichangas

Made these for the family last night. Everyone loved them and thought they were a great alternative to the boring taco's and burittos! Chimis are not regular fare in Australia - but it didnt take too much to convince my family - they love mexican food. I took some of the revies on board and baked mine in the oven rather than frying. Also omitted the olives - I love them, my family hates them. majority rules! Thanks for a nice change in the menu.

Cream Cheese Frosting II

This recipe was perfect as written. Beautiful creamy texture that tastes so yummy - exactly like cheescake. The only thing i did differently was to add a little lemon juice. Such a subtle difference bt you'll notice it. Thanks for a great recipe. It will go in my journal for sure.

Warm Crab Parmesan Dip

I used Canned crab - as fresh where I live is a huge expense. Made everything as the recipe states (except i completely forgot the garlic! oops - no dramas though - my brother who looooves garlic more than any other ingredient whinged when i said i forgot it - but it didnt stop him sitting there eating half of it!!!). I served it in a bread bowl with the inside bits of bread to dip in and a few sticks of celery and carrot. Even the bread bowl was gone by the end of the night! EVERYONE at the party raved! Thanks!

Best Carrot Cake Ever

I made this completely as directed... it was the most delicious Carrot Cake i have ever tasted, and it recieved so many compliments on my mum's birthday from all the guests. If you are not looking for a really super dense moist carrot cake, then look elsewhere - but for those of you that can't resist the heavenly moist cake that this recipe will give you - then go for it! You wont be dissapointed by the result. Seriously, i cant give enough compliments! Thanks for the great recipe!

Almond-Topped Fish

This is getting 4 stars only because of how much i love the broiled tilapia parmesan from this site, and for the fact that i will always compare to that dish. (Though in saying that - this dish is much lighter an healthier!) Family is currently on a low carb diet and this was perfect for that with a yummy fresh salad on the side. I didn't change anything except for add some spring onions sliced finely over the top of the cheese mix as it was cooking and then sprinkled all the almonds over the top. It was a great meal.. Thanks!

Bourbon Chicken

Really dry chicken, not at all what i expected. And we followed this recipe from scratch. Sorry , i usually love most things from this site, however this just wasn't for me. My brothers, however, like anything chicken, and they didnt complain at all really. They just added some extra BBQ sauce on top.

Easy Baked Tilapia

This was really yummy. Ultra healthy and delicous for a family thats currently in a low carb diet. We dont have old bay seasoning in Australia, so i had to improvise a little. But it was still a tasy dish. Served it with more vegies (zucchini, capsicum, broccoli) and didnt use frozen, we used fresh! Thanks :)

Low-Fat Blueberry Bran Muffins

Made this recipe as written (except used 1 cup wholemeal flour - no plain) and they turned out lovely and moist. Really yummy low fat muffins! I also added extra berries for a little extra sweetness.... great!!

Spicy Oven Fried Chicken

I knew this was going to be good before i even tasted it. I too used ranch dressing instead of the buttermilk and i think this is probably the BEST chicken i have ever tasted. And i truly mean it! The spices were beautiful without being too overpowering and the chicken was lovely and moist. Took other suggestions of baking on a wire rack. I used chicken tenderloins to make chicken strips and served it with Honey Mustard Dressing from this site... divine!!!

Bourbon Whiskey BBQ Sauce

My brother has just started an apprenticeship at a restaurant and came home talking crazy about how good the BBQ sauce was that the restaurant makes. Well if that isn't a challenge i don't know what is. I had saved this recipe ages ago and finally had the chance to make it. Needless to say, he wants to give the recipe to his boss ,because he feels that mine is so much better, its embarrassing to serve that old recipe at work! I LOVE proving people wrong!! Thankyou so much for the recipe, made it as directed and obviously, it was perfect. (No lumps - made sure i whizzed up the onions etc in the mixmaster b4 i started!)

Texas Ranch Potato Salad

Really super delicious!! I love and my family all love potato salad... especially with a beautifully cooked steak on the BBQ, and this was probably better than my grandmothers, who up until now has been the potato salad maker in the family:) Move over nan! (Only thing i changed was the red potatoes - very hard to buy in Australia - used regular baby potatoed instead!)

Creamy Chicken with Corn, Tarragon and Tomatoes

Substituted fresh basil (my favourite herb- i love to smell the bunches in the supermarket - i know - im so weird!!) for the tarragon, and used fresh corn cobs. Kept the recipe as is apart from that tho! Ymuumy chicken recipe that my family really liked, and will probably request again.

The BEST chilli we have had EVER! I feell like ive been saying that alot since i started using recipes from this site, but i'm really not lying! I specially ordered the BBQ sauce from usafoods.com.au (the only place in Australia you get get proper American food!!) for this recipe, and im glad i did. The BBQ sauces in OZ just dont have the same smoky taste. I have heard of chocolate with chilli and will never go back now! Thankyou so much for the great chilli recipe! Planning on serving the leftovers tomorrow night with a whole baked potato, sour cream and coleslaw!

Homesteader Cornbread

Yummy Cornbread. Not too sweet, not too salty! It was really great straight out of the oven with lashings of REAL butter spread on it (my idea of heaven!!!). I served this with Chilli Ricks from this site. Great combo!!!

Butterscotch Brownies III

The icing ruined it for me i'm afraid. Way too sweet!!(stick to the roof of your mouth sweet). Its saving grace was the chewy, almost cookie like brownie. If i make them again, it will definately be with a different icing. Thanks for the brownie recipe anyway...

Sloppy Joes II

I live in Australia, where most people have never heard of sloppy joes except for when we see them on movies (Billy Madison for my family!) - My brothers have been bugging me to make these since they saw that movie years ago. I never thought i could sit through a meal with what looked like soggy mince with ketchup and a bread roll. I was so wrong! I finally gave in and instead of me making them, i got my 15 year old brother to experiment while i was on my way home. I have never seen something gobbled up so quickly... not ever! They were really yummy and sweet, which from the reviews is what they are supposed to be like, and he made it exactly as the recipe states. Thanks for the great recipe that we will use again and again. (The only thing i would change is maybe not use the green pepper - we diced it up in the mixmaster and all night all i could smell was green pepper! - so maybe use 2 sweet onions instead)
