Grandma's Lemon Meringue Pie

This is most definitely the best Lemon Meringue recipe i've tried-really easy and VERY tasty-I like to add about 3/4 the amount of sugar and a little extra lemon juice as I like mine quite tart.Lovely comfort food for cosy nights in front of the TV!

Best Ever Banana Bread

This really IS the best!I used half wholemeal and half white flour and had no buttermilk so used plain yoghurt and it still came out beautifully,very moist and banana-ey.My only worry was the amount of sugar so i may try to reduce this or substitute some for honey next time,many thanks for a fab recipe!!

Lentil Soup III

Looking at the few simple ingredients you think this is going to be a little bland but it's very tasty,filling and comforting-real winter warming,I had to add a bit more water but obviously that's personal taste.yum!

Caramelized Baked Chicken

This made a lovely marinade but not the sticky coating i expected-i then tried minimising the sauce in a pan whilst we ate to pour on after and we were enjoying the chicken so much that i forgot it was on,burnt the pan and had to bin it,it must have been good!!! My kids absolutely loved it with just white rice and corn and tried to steal mine when i was out the room but hubby found it a bit plain.

Cinnamon Streusel Orange Muffins

Lovely soft,sweet muffins-i forgot to add the butter to the topping and they were still yummy,will add some raisins too next time as they're for my kids lunch bags but found them easy to make and had all ingredients in my kitchen already except buttermilk-will definitely try adding lemon juice to milk instead of scouring the aisles for it as not so easy to get here in the UK,although major supermarkets are ok.

Six Week Bran Muffins

I made a couple of adjustments-i adjusted the yield to 18 servings which uses one egg and is just enough for one large batch of muffins,i used Weetabix and added soaked goji berries and raisins,mix was very runny and i thought i'd messed this up but the muffins turned out soft and tasty and even my fussy kids ate them.These will be a lunchbox filler for them as muffins for breakfast aren't that common in the UK!

Raspberry Buttermilk Muffins

I am eating one of these delicious muffins as i'm typing-YUM!The buttermilk really makes them soft and light.I pushed the raspberries into the top of the muffins just before putting them in the oven and they didn't sink as much.

Carrot Banana Bread

Absolutely delicious.I added 1tbsp of rolled oats instead of nuts as I was making this for my kids and made as giant muffins instead of a loaf and turned out great.Even my husband liked them and he doesn't eat bananas or carrots!

Yellow Dhal - Sweet Potato Soup

This a spicy,filling soup.I blended the soup after cooking and used quite a lot of pepper.I live in England and several of my asian friends make an almost identical soup as an old Indian family recipe-very authentic. Great if you are on Weight Watchers as both lentils and sweet potatoes are 'free foods' if you are on the Core plan.

Clone of a Cinnabon

These buns were gorgeous,similar to the iced danish that Greggs sell here in the UK but tastier with lots more flavour and cheaper,Made 14 good sized buns from this recipe,my husband took 8 to work and they were gone in seconds. I used plain icing for the topping as i thought the flavours might be too overpowering for my kids and this was yummy too!

Lemon Sugar Tea Cookies

Baked these lovely cookies for my daughters cake sale at school but used golden syrup instead of corn syrup and fine lemon zest and juice instead of lemon extract-they were gone before the sale started(her teachers got there first).Really easy to make and melt in your mouth!
