Delicious Vegan Spelt Muffins

I'm going to rate these muffins first based on MY taste as a non-vegan, and then when my vegan niece comes and tries them, I'll make an addition to this review as to her viewpoint. This was my first experience with spelt flour, and it tasted grainy to me. However, the flavor of the muffin itself was very good. I took the liberty of using the addition of sweet potato and dried plums since the submitter suggested possibilities of additions to this basic recipe. There is another recipe here submitted by the same person using sweet potato. The twelve muffins cooked up perfectly and took exactly 18 minutes to bake. I do think adding nuts to these would be wonderful. Thanks, Mandi!

Bourbon Whiskey BBQ Sauce

I needed an emergency bbq sauce because the one I had was "gone." This was easy to make and very delicious. I cut it to 4 servings and left out the two ingredients I didn't have available--the tomato paste and liquid smoke (which I never ever use anyway). I bet it's even better when you let it sit and let flavors blend well. I will definitely make this again! Thank you so very much, Kevin.

Garden Meatloaf

This meatloaf fit the requirements for the ingredients I had on hand. It is easy to put together because of the few ingredients. I think I'm not good at judging how much bread crumbs it takes to hold something together because mine was pretty loose. I think I'm more of a fan of using oatmeal rather than the Progresso-type crumbs. This will make yummy sandwiches for us tonight! Thanks, Ann!

Roasted Wild Mushrooms and Potatoes

Upfront here: I had to change up things here because of ingredients available to me. I've eyed this recipe for a long time now, and there is no way I could find the mushrooms called for. But I needed to try this recipe (it has been calling to me). So I had to use dried mushrooms that Trader Joe's has available this during the holidays (porcini, shiitake, black & oyster mushrooms), and they are a far cry from those called for. And I used red potatoes. Other than that I used the recipe as written. I thought it could have used a little more garlic and maybe more seasoning. It's possible that the other mushrooms would have added that flavor---and I'd love to try them. I'll keep looking for them. Thanks, Chef!

Crispy Chicken Nuggets

Kids will love this! Adults will want to add more seasoning (I like Papa's Seasoning Salt from this site). I made this as directed. It took me 30 minutes from start to finish, but that was with interruptions and fixing other things, too. So this is an easy dish to make on a busy night. My husband really liked it! Grandma's Povitisa (Po-vuh-teet-zuh) Povitica Croatian Nut Bread

My husband just took a look at this creation as I was getting ready to photograph it, and he said it brought back many memories of his Croatian grandma's work! It is a good thing that I'm about to leave the house, too, because otherwise I'd sit and eat the whole thing! Well, not really because it is very big, as you can tell from the amount of the ingredients. This is one of those recipes that looks better each time you make it because it does take practice. I had a difficult time rolling it out to 30x20, but that's my fault because the only thing I did different from the recipe was to use butter rather than Crisco in the dough. I hope the submitter of this gem will post her photo because it is so MUCH better than this one. But I'll keep trying! This is delicious! Now I don't know if I want to give away part of it as planned! Thanks, StephaniCCP!

Lemon-Marmalade Cookie Sandwiches

This cookie is a very delicious cookie, and I find myself wanting to lick out the filling and just eat the cookie by itself. The lemon marmalade I had was kind of bitter, so I made some using that, orange marmalade (better), and Trader Joe's Salted Caramel Sauce. I think that something with dark chocolate or semisweet would even be better! When I put the two cookies together, I thought they were a little thick, so next time I'd make them a little thinner than 1/4". I used my linzer cookie cutter, so rather than 6 cookies, I ended up with 13 cookies because they are smaller (I would have had 14 except I did a little taste testing in there). I also cooked them about 15 minutes at 325. I did as the first reviewer suggested to grind the nuts first using my Cuisinart Smartstick. I forgot to sprinkle them with powdered sugar, so next time I'll do that. And there will be a next time! Thank you for a wonderful little cookie, Laria Tabul.

Dijon Grilled Pork Chops

The mustard I used on this was from a foursome I got from Trader Joe's--Blackcurrant Mustard. I read one review that said these chops had no taste, so I decided that a sweeter mustard might work better. You can see the seeds in the mustard on the photo I took, so maybe a whole grain mustard works best. Otherwise, I followed the recipe as written. We enjoyed these pork chops. We rate it a 4 1/2! I've saved some of the reserved sauce for another recipe--maybe chicken. Thanks, Laura! This helped us start in the new year!

Gorgonzola Cream Sauce

Peppermint Rice Crispies Squares

When asked how this recipe compares to just the regular Rice Krispies bars, my granddaughters declared that these are the best! I do think that if left to their own devices that they would have finished off the whole pan by themselves. I cut mine into heart-shaped pieces with a cookie cutter, and they started out just wanting the remnants! So they learned a new word at the same time they more than satisfied their sweet teeth! Honey Nut Dipped Chicken

I cut the recipe in half but otherwise followed the directions as written with one exception---I didn't marinate the chicken as long as required. And for me, that might have been my downfall because I felt that it needed a little more flavor. Hubby didn't agree with me at all! He loved it! I did think the amount of marinade was running a little short, so don't be afraid to add more of it! I liked the idea of the corn flakes and walnuts. I will make this again, using the full marinating time. Thanks, patti! We had enough left over for dinner the second night, too!

Cranberry Balsamic Vinaigrette

This recipe follows a pretty typical formula for salad dressings, so you could use this subbing almost any oil or vinegar. I very much enjoyed this combination! I think next time I have this (tonight, as a matter of fact), I'll also add some whole cranberries to my salad to go along with the chopped ones. Thank you very much, lisa weston, and I'm sure others will enjoy this, too!

Salami, Cream Cheese, and Pepperoncini Roll-Ups

I decided to use this recipe which is close to the one I've made over the years. I wanted to see how it was to add butter to the batter and to the popover cups, too. Well, they were a huge hit! They turned out perfectly. The one thing I did that is not written into these instructions is to let the batter sit at room temperature for about 1 1/2 to 2 hours. After turning down the heat, they didn't require the whole time of baking---only about ten minutes more. I would make these again! Thanks, J Miller!

Brown Sugar Cookies

I'm so very very glad that I waited to write my review. In fact, you'll probably think I'm totally nuts when I tell you my thoughts. I made these, waited until the next day to taste them because of what the submitter said about the taste getting stronger the next day. I didn't think they really tasted at all. I stuck them away in a cupboard and promptly forgot them. I found them this morning--eleven days later! And guess what?!? I LOVE them! Yes, they are getting old, but the edges are wonderfully crunchy, and the middle is still just creamy soft. And the taste is very pronounced. Yummy with my coffee this morning! Now I'll put them in my freezer to preserve them for the future coffees! Thanks, Noelle!

Toasted Pecan Meltaways

I made these as stated in the recipe, and they turned out great! One thing I would say is that if you use salted butter, you can cut the salt and add it in a little at a time as you think it needs. Unsalted needs the whole amount (what there is of it). These are delicious! Thank you so much, Celeste, for adding another cookie to my repertoire!

Peanut Butter Crispies I

Since I love all the ingredients in this recipe, this was a no-brainer for me to try! I made only a fourth of a batch just in case, but I know I'll have to make more for sweet treats for the little ones in my life (and me, too)! I had no problem removing these from a glass baking dish that I used. I ran out of creamy peanut butter and so there's a mixture of crunchy and creamy in my photo, but I don't think it matters which you use. I also pressed the pieces together upon removing to make them stick together better. You'll notice that many reviewers used different cereals, and I can't think of a sweeter way to use up the last of any box of cereal! Thanks, Cathie!

Parmesan Cream

I made this to go over some chicken breasts from Costco that I sautéed in olive oil, butter, and some Hawaiian seasoning I received as a gift. I did make only half a recipe because there are just the two of us, and it was hard to use my immersion blender in such a small amount. I was able to tilt my pan and get it mostly blended. It was yummy and filling. I would definitely make this again!

Mama Palomba's Spaghetti Sauce

Although I have not yet made this, I DID eat it---several servings of it to be exact! Baking Nana featured this at an AR Peeps Christmas get-together. This is something that I WILL be making in the next couple of weeks for something quick to pull from my freezer when things get hectic! I can honestly rate this a 5 Star! Thank you so much, LindaT.
