I don’t remember a time when I have used aluminum foil other than Reynolds, and that’s been 50 years of cooking and baking.  Every once in a while I’d try another product, most recently one from a very popular big box store.  I couldn’t wait until that product was gone from my kitchen, though… MORE

About this Cook
As a child of Swedish parents who always cooked, I have always loved to serve up my love to others through food--just like my folks. Most of my favorite family memories are a result of meals, families sitting around the table talking, parties with good food, good wine, sparkling conversations.
My favorite things to cook
My favorite foods depend on the time of year, the occasion, and my hankerings. I'm easily coerced into changing my mind by mere suggestions (I am Libra rising): a bit of meat--yum; a pancake--I'm ready; potatoes--now what! Desserts, well, that's a whole new ball of wax! Whew!
My favorite family cooking traditions
Swedish pancakes are really a trademark I copied from my mother. These crepe-like pancakes are cooked on a cast iron griddle, spotted with sour cream and jam, rolled up and then sprinkled with syrup. I dare you to eat just one!
My cooking triumphs
When I cook vegetables and am actually able to eat them, I consider that to be a triumph! I grew up with a botanist father who grew EVERY single vegetable possible and could NOT for the life of me eat them. I'm the only one of four children who would sit at the table for hours until I finally convinced them I wouldn't eat. Now, only a few, and then mostly only raw.
My cooking tragedies
When I was first married more than 40 years ago, I bought a bag of peanuts from someone "giving" them away for some charitable organization. Naive, yes. I made a meatloaf (supposedly a very good recipe) using those stale, sour nuts and ended up throwing the "result" against the sink when my husband suggested that perhaps this was not really an edible meal. I have since learned better ways to handle disappointments!

Healthy "Italian Mac and Cheese" with Carrot Puree
Since I'm not a fan of elbows, I used rotini---the gluten free one (not my favorite choice, but what I have to deal with for my tasters). I have to tell you that my granddaughter loved this! I thought it was really missing flavor---more salt and (cayenne) pepper? Tajin? Sriracha? I followed the recipe exactly otherwise and thought I'd make it again for the little ones. I do really like the Barilla pasta---my favorite choice always!

The Creek's Meatloaf
For me this was fraught with problems, mostly because I was looking at the previous reviews. I really do love all the ingredients of this recipe, but it just didn't come together for me. I used red bell pepper because that's what I usually have on hand. My bacon was thick-cut, so I only used 8 slices, and they got lost in the mix. I did cut back on the cheese and the onions and the oatmeal, and that was my mistake because it didn't really hold together. The cooking time is way off, as stated by others--there is no way a meatloaf can be baked in 15 minutes (mine took an hour). In the very end, we liked the flavors, and I really wanted to love it. I would love to sit at Hmiller's table for this because I bet she has the real "fix" on this meal!

Spaghetti with Buffalo and Tomato and Basil Sauce
I used hamburger because I couldn't easily find buffalo today, but I do know how delicious ground buffalo is! I wanted to keep adding things to this recipe---more flavoring. I used onions and a little red bell pepper, and the pasta I used (delicious, by the way) was the gluten-free spaghetti. Talk about an easy way to make dinner! Thanks so much, Barilla!
