Greek Green Beans

Good, but WAY too much olive oil. Next time I'll just boil the green beans a little first and maybe just coat them in olive oil. Otherwise, delicious.

Pasta with Scallops, Zucchini, and Tomatoes

This was really yummy and healthy! I used whole wheat fettucini. I even made an extra dish without red pepper, garlic, and basil for my 13 month old. He loved it, scallops and all! I think next time I'll add more tomatoes.

Cajun Pasta Fresca

This was delicious, healthy, quick, and easy. I used Barilla Plus Angel Hair pasta and reduced fat cheeses and I omitted the salt. My cajun seasoning was salty enough. IMO there was too much pasta for the sauce only because I love tomatoes and would've liked to get more tomatoes into my portion. I added turkey sausage which I highly suggest, it was so good. My husband said " I couldn't imagine this without the sausage", but he doesn't like vegetarian meals. I also used 2 minced garlic cloves (for 1/2 recipe).

Tomato Zucchini Casserole

This was delicious, but to me a five star recipe should be very healthy as well, hence the 4 stars. Next time I would like to make the bread topping a lot less and use olive oil instead of butter. I did use reduced fat cheeses. My hubby liked it and he's not a fan of zucchini. My one year old liked it too.

Caribbean Pasta with Shrimp

This was really good and spicy, too spicy for my husband actually. Next time I won't put in as much chili paste. I used ground all spice instead of whole berries, and OJ instead of Gran Marnier. I also used whole wheat pasta. The left-overs taste great!

Spiced Sweet Roasted Red Pepper Hummus

This was so good and easy. My husband is not a fan of hummus, but he said this was the best hummus he'd ever had. I agree! I didn't have tahini so I used an equal amount of natural peanut butter. I served this with warm pita and the Greek Chicken Pasta I found on this site.

Greek Chicken Pasta

I loved this! I only used 1/2 the amount of pasta and added a little juice from the jar of artichokes. Mine was not dry at all. My hubby doesn't like artichokes, but he liked this, though not as much as me. My toddler liked it too. I used whole wheat penne.

Awesomely Easy Sesame Asparagus

This was so good and easy. My hubby loved it. I only boiled the asparagus for 3 minutes and it was perfect. I also used sea salt instead of regular - it's healthier and I love the taste. I made this with the "Apple and Orange Chicken" I found on this site and it was an easy, delicious, and healthy meal. One of our faves!

Apple and Orange Chicken

This recipe was so delicious, easy, and healthy! I used chicken breasts instead of bone-in and omitted the salt. I couldn't find dry cream of chicken so I added a can of cream of chicken. I also added 1/2 an onion, sliced. I cooked it for the full 1 1/2 hour and it was perfect. I served it over brown rice and also made the "awesomely easy sesame asparagus" I found on this site. My husband loved this as well. I will definately make this again!

Fra Diavolo Sauce With Pasta

So good and easy. Not too spicy for me or my husband. I used canned tomatoes and a lot less pasta. I also didn't have scallops so I doubled the shrimp. I used only 1 tsp of salt which was still a little too much. Next time I'll probably double the sauce, we love tomatoes! I will also be sure to get some scallops.

Asparagus, Chicken and Penne Pasta

Really good, but I changed it quite a bit. I added 1/2 cup diced white onion, mushrooms, dry cooking wine, and a little extra olive oil and reduced it down before adding the asparagus. I also added just a little butter to the pasta before tossing. My husband loved it, but said it might be a little spicy for him. Not too spicy for me though!

It was very good, but could use some spice. Next time I'll add green pepper, red pepper, red onion, and red pepper flakes. I also doubled the sauce recipe. I served it with brown rice instead of white for a healthier option.

Black Bean Tortilla Casserole

I loved it, but my hubby would prefer meat in it, so next time I'll probably add shredded chicken. I topped it with cilantro, tomato, and avocado slices, no olives. I had to use quite a bit more picante sauce than the recipe called for to be able to boil it. I think corn would be good in this as well.
