Tuna Snack Spread

Very tasty and easy! I made this for an after school snack today, and the kids (ages 4-14) loved it! I added some white pepper and subbed white vinegar for lemon juice. It came out great. Thanks for the post.

Lasagna Roll Ups

Very good. After reading the reviews I made a few changes. I substituted the tofu for veggie grounds, added 8 oz fresh mushrooms, Italian seasoning, garlic, salt and pepper and 2 eggs to help bind everything. I was able to make 15 rolls before I ran out of stuffing. My kids enjoyed helping to mix and stuff. Thank you.

Coconut Curry Tofu

Very tasty! Kept it mild for my little ones, but added Sriracha to mine for the kick. For those of you who do not like the texture of tofu, here are some tricks that help firm it up a bit. You can do all or one of these techniques depending on how much firmer you would like it to be. Unwrap and drain you tofu the day before you are planning to use it. Place between paper towels and press gently then wrap in new paper towels, place in a plastic baggie and return to refrigerator until ready to use. If you do not have long before you want to use it you can drain and press as before, but then slice it and place on cookie sheet in the oven set to 150 and leave for 20-30 min. Hope this helps.

Mexican Chocolate Cake

Very tasty. Normally I don't change a recipe the first time I make it, but I kept tasting the batter and wanting it to be spicier so I added a bit of cayenne pepper and ground anise and also doubled the cinnamon. I also used only 1/2 of the cocoa power and 1/4 c mexican chocolate and 1 cup brown sugar + 1 cup white rather than using all white sugar. I made a chocolate ganache with cinnamon and cayenne pepper to go on top. Very good. Keeper for sure!

Ranch Dressing II

Easy and tasty. I'm used to ranch being a little thicker, so I may try some of the suggestions next time. My 12 year old saw me making it and didn't know what it was so he tasted it and said "I can really taste the Ranch". lol Guess it tastes just as it should!

Burger or Hot Dog Buns

Easy and delicious! As per other's suggestions, I used bread flour and let them rise for a bit longer than suggested. I also brushed them with clarified butter half way through baking. They do not come out like the buns you'd buy in the bread section of your grocery store, more like the kind of buns you pick up at the bakery. I will be making these again and again. Thanks!

Very good! The only thing that is keeping it from being a 5 is that it came out a little soft for my taste. Everyone loved it hot, but didn't care for it much cold. I'm thinking about trying it with brussle sprouts...? Thanks for the post!

Fragrant Chicken Curry

Really it's more of a 4 1/2 and that's just because it never seemed to "thicken" and I was left with a lot of tasty, but runny sauce. Very good and super easy! I used fresh chicken breasts that I browned before adding to the sauce and simmering. Turned out great! Thanks for posting.

Very good and well worth the trouble! I had had this once before at a brunch and was pleasantly surprised to see it here. I omitted the butter and cooked them a bit longer per another review adn they were perfect! Will definitely make this again.

Very good! I followed the advice of some of the others and shreadded the meat half way through and cooking it in the juices for the remainder of the time. I left out the peppers on accident and it still came out very flavorful!
