Twice Baked Sweet Potatoes
I was doing a trial run for this year's Thanksgiving and saw this recipe. I loved the idea. I just changed a few things. While the potatoes were baking (w/o the oil but in foil - I didn't want the fire department to make a call) I took the same amount of unsalted butter and sauted finely chopped, peeled apple and cinnamon until the apples were soft but not falling apart; Cooled the apples & butter and followed the recipe as suggested. I switched out the walnuts for pecans as I did not have walnuts on hand. Because I had the apple in the sweet potatoe mixture I sprinkled chopped pecans on top! Beautiful presentation but very rich and filling. I think it will be a hit with the vegetarians at my table! Happy Thanksgiving!

Linguini with Broccoli and Red Peppers
Molle888 - Great go to recipe when you want something light and fast! Agreed there is not enough "sauce" for a pound of pasta. I also add 1/2 red pepper flakes to kick it up. I do substitute chicken broth/white wine for the veggie broth. I've even thrown in grill boneless chicken breast at the end for additional protein. Try it cold with cubes of mozzerella cheese and grape tomatoes for a side dish!

Awesome Sausage, Apple and Cranberry Stuffing
This recipe is outstanding! Thanks to other reviews, I also omitted the liver and shopped for the sausage with sage. I didn't have dried rosemary, sage and thyme on hand so I substituted Bell's Seasoning. I baked it the day before in a cooking bag; transferred it to a buttered casserole to re-heat. WOW! A real keeper -- easy and delicious!
