Honey-Ginger Grilled Salmon

I didn't have the correct ingredients, so I substituted balsamic vinegar for soy sauce and white onion for green onion and this was pretty darn good. I'm gonna try it with the correct ingredients soon!

Oven Scrambled Eggs

This was alright. A good idea for making lots of scrambled eggs at one time, but there was too much salt and too much butter. I'd cut those way down if I make it again.

Spaghetti Squash with Pine Nuts, Sage, and Romano

This was tasty, but the cheese didn't mix in well with the squash. The combination of the Romano chees, squash and pine nuts tasted great, but I think some alterations to change the consistency will be better. This was a great recipe to start with for experimenting with something I'd never eaten or even seen before!

Penne with Spicy Vodka Tomato Cream Sauce

Tasty Lentil Tacos

I used veg. broth, but next time might just use water, because this was plenty flavorful. I tried using corn tortillas, but this recipe really needs the crunch. So I used the leftovers to make taquitos. Rolled up in corn tortillas held together by a toothpick, sprayed them with cooking oil on a baking sheet and baked at high temperature for a few minutes. They were really good with guacamole.

Homemade Black Bean Veggie Burgers

This has become a regular in my diet. I followed recommendations by others to use 2 eggs and to dry off the beans and veggies before mashing and mixing. I don't have hot sauce, so I just leave it out.

Tilapia with Creamy Sauce

Great, easy and quick. I wrap the tilapia in foil to cook so there's not so much need for oil. I put just a little bit of olive oil rather than butter. Also, I don't have lemon pepper, so I just use lemon juice liberally and sprinkle with black pepper.

Easy Lentil Feta Wraps

The first time I made this, I overcooked the lentils and there was too much liquid. The second time, I was more careful about the measurements and not overcooking, and it was really good. I like it with or without olives.

Black Bean and Corn Quesadillas

Maybe these are just not my thing, but they really didn't do anything for me. The taste was not memorable but did leave me feeling queasy. I'll stick to plain quesadillas with tomatos and guacamole in the future.

Easy Chicken Tetrazzini

Surprisingly good! It didn't look appetizing at all coming out of the oven, but it was delicious! I left out the butter and bouillon, instead adding a little olive oil and chicken broth. I used leftovers from a whole roasted chicken. Quick, easy, few ingredients, and great with some added frozen veggies. This will be a staple recipe for me!
