Peanut Butter Vegetable Chicken Soup

Yummy!! I didn't have all the veggies, but added in a leftover baked sweet potato (mashed) to thicken slightly...so far, no one identified the *secret* ingredient :)

Soft and delicious fresh, but tough and chewy leftovers. Cooked mine on a baking stone at 500 F just until the bubbles turned brown. Roasted the garlic in the oven before chopping and kneading into the dough.

Chicken Makhani (Indian Butter Chicken)

My family raved about this one...although most added cayenne pepper to their plates to give it more heat. I used fresh garlic and ginger but otherwise followed the recipe as is. I tripled the recipe, fed 6 people and have enough leftover for lunch tomorrow. Definitely planning to make this again!

Asian Beef with Snow Peas

Wow! It's rare I fix a dish with sauce that all 3 kids and my husband like...the pickiest one even had seconds. I did follow a couple of the reviews--doubled the sauce and added some orange juice. This will show up on our table often.

Honey Roasted Red Potatoes

Mushroom Pork Chops

One dish wonder--preheated my stoneware baking dish in the oven. When I added the not-quite-thawed chops, they quickly browned on one side. Added garlic salt and pepper, flipped them over. Tossed on the sliced mushrooms and onions and topped with the mushroom soup (added 1/4 c. sour cream for extra richness along with 2 minced garlic cloves) and baked til bubbly and tender. Yippee for leftovers for lunch tomorrow!

Scrumptious Frosted Fudgy Brownies

Amazing brownies. I didn't have enough butter to make the full recipe, so I cut it in half and used a 9x9 pan. Also didn't have any unsw. baking choc. squares, so I substituted cocoa and butter (3T cocoa + 1T butter for each oz of choc). Made the full recipe of frosting--keeping the extra in the fridge--it will taste really good on a spoon!

Easy Chicken Satay

No leftovers...I did add minced ginger to the marinade and cayenne pepper to the sauce. This was amazing with coconut rice and grilled veggies. Next time I will double the recipe!

Frosted Banana Bars

Fabulous--Better than banana bread any day! I only used 1 c. of sugar since that was all I had...don't miss the rest. Although it would be great without frosting, I had leftover cream cheese frosting from the last time I made "Clone of a Cinnabon" rolls. It's all we can do to stop at 1 slice!

Smothered Chicken Breasts

My family and guests devoured this dish. Definitely will make it again. As another suggested, I marinated the chicken first--I used lemon juice, garlic and italian dressing. Also, after assembling everything, I put it in the oven to melt the cheese and finish cooking the chicken. Since I didn't have cheddar on hand, I used an italian/mozzerella blend.

Clone of a Cinnabon

My 12 year old son doesn't often rave about new recipes, but declared these "the best cinnamon rolls ever". I haven't often been pleased with homemade cinnamon roll recipes, but this one is not only fabulous but very easy!
