Curried Bean Salad

Loved it. Big hit at a pot-luck this weekend. Upped the servings to 8 and added a can of black beans to the 3 other cans of beans. Used frozen corn, and skipped celery because we were out. Excellent taste- (used about 4 cloves vs the upped recipe requirements, because we were low on garlic).

Zucchini Patties

Used 3 cloves garlic, subbed cheddar for parm. ( I was out) and used panko instead of flour. Cooked on cast iron pan with olive oil. Delicious! My zucchini -hating husband, and 5 yr old left me a measly two (made about 9 small-sized cakes.

Banana Waffles

Loved them! My 4 year old was thrilled- & we were as well. I switched to 1/2 whole wheat flour/rest AP. Added about 1/2 t. cinnamon & an extra dash nutmeg/mashed the bananas(which were extra ripe). Buttered the non-stick waffle maker & they were still a bit sticky-but well worth the patience to peel them off! Thanks for the recipe!

Flourless Chocolate Cake I

Oh. My. God. This is outstanding. Totally decadent. We had a dinner party with 4 adults and 2 kids and barely ate a third of it. I used Ghirardelli bittersweet chips since I didn't have any squares in the house. Otherwise I followed the recipe. Unmolding was a little tricky, but once I ran a knife around the outside of the pan it came out great. Made an 8" cake pan plus two 7 oz ramekins. Served with plain (unsweetened) whipped cream to cut the intensity a bit. Will DEFINITELY make this again!

Best Breakfast Cookie

Great recipe. Don't forget to add the sugar with the dry ingredients - the recipe doesn't mention sugar in the steps! My 3-year-old ate hers up in 30 seconds flat. I used a 5-grain hot cereal instead of plain oatmeal, and used half whole wheat flour. I ran out of brown sugar after half a cup (oops!) so I used white sugar for the rest and added a 1/2 cup of molasses to the liquid ingredients. Didn't have enough apricots on hand, so I used some dried cranberries, too. 8 1/2 minutes in the oven was just about perfect. I got 48 cookies out of this recipe. I can't wait to try messing around with different combinations of fruit, and cocoa sounds great too.

Bread Machine Bagels

Brilliant. So good, we'll make these again and again. Made a mixed batch with dehydrated onion, sesame seeds, caraway seeds and kosher salt. Can't wait to start tinkering with the recipe to see if I can sneak some whole grains in there.

Cranberry Apple Bread

Excellent recipe. I went a bit heavier on the apples and used half whole wheat flour. Left out the nuts. Came out great--moist, crunchy on top. Would also be good as muffins.

Whole Wheat Honey Bread

A good baseline w/w bread. I preferred it mixed in the machine but baked in a loaf for about 30 min. @ 350. Easily tweaked. Worked well with molasses, also with maple syrup.

Artichoke Chicken

This went over like gangbusters, and I was feeding a picky eater and two pregnant women, so that's saying something. I subbed minced garlic and fresh ground pepper for the "garlic pepper", and went a little lighter on the mayo. That's an awful lot of mayo. But overall, very tasty, great over rice.

Yummy Quiche

Not for the faint of heart. Delicious, but I can still feel my arteries protesting. Serve it with fruit, green salad, and anything else healthy you can think of so you don't end up eating 3 slices (like I did).

Crabmeat Quiche

Delicious. I subbed sherry - didn't have an open bottle of white handy - and it came out great. I used baby Swiss for a milder flavor. I A little more work than "Crab Quiche I", also from this site, but worth it.

Zucchini Brownies

I read the reviews, so I was prepared for the gravelly texture of the batter going in. Wasn't prepared for the gritty texture coming out, though. Maybe my zucchini weren't fresh enough? Frosting made them palatable, but I will keep looking for better ways to use up all that zucchini - and stick to the tried and true brownie recipes.

Caramelized Onion and Gorgonzola Pizza

Wow, that's some tasty pizza. I'd go a bit lighter on the cheese - it overpowered the onions a little - but otherwise it was excellent! This was enough for two 12" pizzas, one batch of pizza dough in the bread maker. Next time I might try adding some thinly sliced pears just for kicks.

Banana Banana Bread

I only had 2 bananas, so I used 1 cup of applesauce as a substitute. A chocolate craving led to mixing in about 3/4 c semisweet chips at the end. The end result was delicious! With some vanilla ice cream, it was more of a cake than a bread, but hey - what's the difference, really? Bottom line was this yummy cakebread stayed moist for days, and was absolutely killer.

Sour Cream Pound Cake

Baked Mango-Ginger Swordfish

Easy and delicioius. Wouldn't change a thing. I prefer grilling swordfish, but not when it's COLD outside! The marinade makes a delicious sauce over rice. Add some broccoli or asparagus and you've got one killer mid-winter meal.
