Best Ever Banana Bread

Okay, I've made lots of Banana Bread. This may satisy the palate of one who is used to eating out and eating processed foods, but if you are a down-to-earth, cook-everything-from-scratch kind of person, this recipe is not for you. Too sweet, crisp sides (due to the high level of sugar), and not a real banana flavor. It didn't peak and crest, but remained kind of flat (I'm guessing from the lower heating 325 for 1 and 1/2 hour instead of the standard 350 for 1 hour). It has taught me a lesson though . . .to stick with what works!

Chocolate Chocolate Chip Nut Muffins

These were OK. Not fantastic. I was thinking they would be a little more dense. They were moist, but a little too "spongy." The only adjustment I made was melted butter instead of oil, which shouldn't have made a difference.

Outrageous Chocolate Chip Cookies

Wow, a cookie recipe that actually works! These were great. I didn't even follow the recipe exactly which is good. I don't like recipes that have to be followed to a "T" (i.e. I estimated the butter and PB). This was great!

Turkey Dumplings

Excellent and very simple to make. I didn't use refridgerator biscuits but made my own. I did roll them flat and they came out wonderfully. One recommendation . . . I wouldn't stir the dumplings while they are cooking. It seemed to break them apart into what I could see would be a disintigrated mess. I also used all turkey broth from a turkey carcass.

Simple Scones

Wow! Just got them out of the oven and they are wonderful. Once I tasted the dough I kinda figured they would be. I used Smart Balance instead of real butter and didn't freeze it, just cut it in like you do biscuits. For the sour cream I used full fat. Instead of raisins I used frozen blueberries that streaked beautifully when you knead it slightly into a pie at the end. Overall they were great and easy to make.

Amazingly Good Eggnog

This truly was wonderful. I love the way the egg is cooked so you don't have to worry about Salmonella. I actually cut the batch in half just before I added the rum so as my kids could enjoy it too. I then cut the rum in half. All worked out well.

Best Chocolate Chip Cookies

For me, these tasted like your basic Nestle Toll House recipe from the back of the bag. The dough seemed a little puffy as did the cookies themselves. This could be because I used Smart Balance instead of real butter as the recipe called for. I also would up the amount of chocolate chips.
