Chewy Oatmeal Cookies I
I love these cookies. The chocolate chips were left out as I prefer just raisins and walnuts and these were increased to 3/4 cups of each. I used cinnamon applesauce from one of the idividual little cups. I especially like that you can bake them for about 12 minutes for a chewier cookie and a little more if you prefer your cookies more crisp and they still taste delicious.

Sesame Broccoli
This dish is very good, and with a few tweaks is even better. I used red and yellow peppers to add a little colour. Before adding the broccoli, I sauteed a little minced garlic in the oil. After the vegetables had sauteed a little, I added a couple of tablespoons of water and covered the pan to let the veggies steam until they reached the desired tender crisp stage. A splash of soy sauce and toasted sesame seeds finished the dish. This was very well received at Easter dinner, even by those who usually reject all things green. This recipe is definitely a keeper.

Curried Cashew, Pear, and Grape Salad
This salad is delicious! It's a great mix of sweet and spicy and is quite a complex blend of flavours. I've taken it a few times to potluck dinners and it received rave reviews and requests for repeats and recipes. Can't beat that with a bucket of R's. The only modifications I made were to leave out the bacon, and to use roasted unsalted cashews so that toasting them was unnecessary. I also used cider vinegar in place of the white wine vinegar as that's what I had. This definitely goes in my list of favourites.
