Refried Beans Without the Refry

So incredibly easy and healthy, I'll probably never buy a can again. I used chicken broth instead of the water/salt mixture others said was too salty, and it gave it nice flavor. Fine without jalapeno for kids that don't like spice.

Fiery Fish Tacos with Crunchy Corn Salsa

These were very good, and different than most of the tilapia recipes I've tried. I did tone down the spices because I'm a wimp, and used flour tortillas because I like them better than corn, but other than that, I followed the recipe.

Vegetarian Korma

I think because it smelled so fabulous as it was cooking, we went in with too high of expectations. It was good, but it felt like it was missing something (although it is probably very authentic just the way it is). I also needed to cook the potatoes longer than it said to.

Pollo Fajitas

I tried this recipe because I realized I didn't have a fajita seasoning packet but was craving fajitas, and I think I may stop buying seasoning packets. I loved this marinade. The only changes I made were using lime juice instead of lemon, and putting it in the marinade. I served it with cheddar, sour cream, and tortillas.

Hamburger Steak with Onions and Gravy

The only change I made was leaving out the cooking sherry because I didn't have any, and it turned out great. The gravy was fantastic and very easy, and I love that it is made with ingredients I always have in my kitchen.

Delicious Ham and Potato Soup

I followed the recipe exactly, and it turned out great. I may add veggies in the future to add vitamins, but it doesn't need it. My favorite part was the texture - absolutely perfect thickness. My only complaint is that the serving size seemed off. I thought 8 servings would be enough for my husband and me to eat for dinner and both have leftovers for lunch (yes, we eat like a family of 4!), but there was only enough leftover for one person's lunch. I'll make more next time.

Todd's Famous Blueberry Pancakes

Yum, very good. The blueberries were perfect for its fluffy consistency. The only change I made was that I got impatient and only let the batter sit for half an hour, but they still turned out fluffy and good. I'll definitely make these again.

One Pot Tuna Casserole

This is one of those meals I turn to when I need put off a trip to the grocery store because I usually have all the ingredients on hand. Sure, there baked tuna casseroles out there with fancy ingredients that taste better, but this is quick, easy, and flexible (use whatever noodles you have, whatever veggies you have, etc). Thanks for the recipe!

Addictive Sweet Potato Burritos

Great dish - I would definitely serve this to my vegetarian friends. The spices were a great combo with the sweet potatoes. I did make minor changes - I used black beans instead of kidney beans, and cut back on the water (like other users suggested), and I thought those were great changes. Thanks for a great recipe!
