This was my first ever attempt at making French Onion soup. I've only eaten FO soup at places like Panera Bread, so I don't exactly know what an "authentic" FO soup tastes like.
This soup is, however, quite good. My husband also really liked it and he is rather picky.
I was a little afraid that I had too many onions after I finished chopping. Red and Vidalia onions are rather large as it is, and I purchased some of the smallest ones that my grocery store had. They cooked down nicely, though, and it looked like the right amount once the broth was added. I did not add any salt at the end, but I probably would the next time in order to offset the strong balsamic flavor. The only comment I have is that the flavor is a little "balsamicy."
