Over the Top Nachos

Like other reviewers, I used taco seasoning. I used chipotle taco seasoning, added canned, sliced jalapenos and baked it for about 10 min in a 400 degree oven. It was great.

Egg Noodles

Not only were these easy to make, everyone loved them. To dry them out, I also put them in a 200 degree oven for about 5 minutes. Worked well.

Chicken Noodle Casserole I

My family really enjoyed this but I did make alterations. First, I used homemade egg noodles. I also sauteed the chicken (diced) with onion. I added garlic powder, seasoned salt and a little bit of cayenne. I also mixed in a bag of mixed veggies with it and added cheddar jack underneath the cracker crumbs. But it was a hit.

Chicken and Green Bean Casserole

I made this for my family and they loved it. I did make a few changes. First, I cut up the chicken breast, then browned it. And I seasoned it with seasoning salt, a little cajun seasoning, garlic powder and pepper. I also omitted the Parmesan and instead topped it with shredded cheddar/monterey jack cheese. Served it over rice and everyone loved it.

Zucchini and Potato Bake

This will become a staple in my dinner rotation. I had friends over and they raved about it. I added a diced yellow onion, parmesan and I also tossed everything in Wegmans Basting Oil. Turned out great!

Runzas (meat pies)

This is very popular in my house but I only gave it 4 stars because of the changes I made. I doubled the dough and used 1 1/2 lbs meat, sauteed with garlic and onion. I also added kitchen bouquet, worcestershire sauce, thyme, oregano, hot pepper flakes and hot sauce to the meat mixture and 2 c. of mozz cheese. We just like a lot of spices and flavor and I thought just salt and pepper would be too bland. My husband and youngest son can't get enough.

Slow Cooker Chicken Taco Soup

This is one of my family's favorite recipes, although I only gave it 4 stars cos I alter it a little bit. I add a little spice using some hot sauce. I also use chicken broth instead of beer. I tried the beer but my family prefers chicken broth. I also use kidney beans or two cans of chili beans. And to cut down on cost, I use chicken thighs, which works just as well. But this is the most requested dish by my family and friends.

Pizza Casserole

Made it almost exactly as recipe stated, except I added fresh mushrooms and used 2 cans of pizza sauce and some herbs. Even then, I didn't really like it. I still thought it was bland and the egg noodles didn't fit at all. Husband ate it but said he didn't want it in the dinner rotation. Kids refused to touch it at all and my 3 yr old is normally anything but picky.

Delicious Raspberry Oatmeal Cookie Bars

I doubled the recipe and brought it to work and everyone liked it. I added a little milk instead of egg to bring the mixture together and found that worked well, in addition to adding some cinnamon.

Russian Tea Cakes I

I just made this for Christmas and my kids and husband love them. The dough was really crumbly and refused to come together so I added a tablespoon of milk and a little more flour. It then turned out really great.

This is a big hit in my home. The only change I make is to use frozen veggies, which I boil with some chicken broth and water. It gives them more flavor I think. But this is a great recipe!
